Abstract

La presente invención se refiere a un producto alimenticio compuesto salado que comprende al menos 35% en peso de piezas de gel que tienen un tamaño de malla en el rango de 0.2-10 mm; 0.2-55% en peso de partículas alimenticias basadas en tejido que tienen un tamaño de malla en el rango de 0.2-10 mm; al menos 2% en peso de material Iipofílico que cubre dichas piezas de gel y dichas partículas alimenticias basadas en tejido; dicho producto alimenticio compuesto salado que tiene la siguiente composición: - 20-75% en peso de agua; - 2-30% en peso de aceite; - 0.1-40% en peso de componentes contribuyentes de sabor seleccionados de ácido glutámico, 5'-ribonucleótidos, sacarosa, glucosa, fructosa, lactosa, ácido láctico, ácido cítrico, ácido acético y combinaciones de los mismos; - 0.5-20% en peso de agua de agente gelificante; - 35-1100 mmol por 100 g de producto alimenticio de catión de metal alcalino seleccionado de Na+, K+ y combinaciones de los mismos. El producto alimenticio compuesto puede ser provisto en varias formas y texturas atractivas. Adicionalmente, el producto es fácil de dosificar, en especial cuando el material lipofílico es líquido o licuado. El producto puede ser aplicado adecuadamente como un condimento sobre platillos, como un complemento o como un concentrado en la preparación de un caldo, una sopa, una salsa, un gravy, un aderezo o un glaseado.
