Abstract
Una composición de alimento concentrado en forma de un gel, que comprende: Agua, Sal de sodio (sal de Na) y sal de potasio (sal de K) en una cantidad total de desde 5% en peso a 40% en peso, en base al contenido total de agua, en donde la cantidad de sal de Na y sal de K debe calcularse como ((peso de la sal de Na + peso de la sal de K) / (peso de la sal de Na + peso de la sal de K + peso del contenido total de agua))*100 en %, Pectina gelificante, teniendo toda la pectina un grado de esterificación menor de 55%, y en donde la pectina gelificante se disuelve en el agua, Sal de calcio, en donde la relación entre (cationes de Na+/ (cationes de Na + cationes de K+)*100 (en %) es de 15% en peso a 95% en peso.
