Abstract
La presente invención se refiere a un concentrado alimenticio que comprende una fase sólida, y una fase de gel; en particular, la invención se refiere a un concentrado alimenticio con partículas de gel incrustadas en la matriz sólida. La invención también se refiere a un método para preparar las composiciones, y al uso de las composiciones. Es objeto de la invención es brindar un concentrado alimenticio que se disuelve rápidamente en agua caliente y que es fácil de desmenuzar. Se ha descubierto que un concentrado alimenticio que comprende partículas de gel incrustadas en una matriz sólida brinda una buena resistencia del concentrado, una apariencia fresca debido a las partículas de gel, y una rápida disolución debido a la estructura híbrida de las fases sólida y de gel en un único concentrado.
