Abstract
Método continuo para fermentar mosto de cerveza, comprendiendo dicho método: fermentar mosto de cerveza con una levadura biologicamente activa para producir un líquido fermentado que contiene alcohol; introducir el líquido fermentado que contiene al menos 10 g/l de levadura biologicamente activa en un recipiente de maduracion; eliminar por separado el sedimento que contiene levadura y líquido sobrenadante del recipiente; y recircular opcionalmente al menos una parte del sedimento que contiene levadura a la fermentacion del mosto de cerveza; en el que el tiempo de residencia del líquido fermentado en el recipiente de maduracion supera las 6 horas. El presente método ofrece la ventaja de que combina la maduracion y la separacion de levadura en una etapa de procesamiento, mientras que los procedimientos continuos convencionales requieren al menos dos etapas de procesamiento separadas, una para la separacion de levadura y una para la maduracion. En segundo lugar, el presente método es muy robusto debido a que el tiempo de residencia relativamente elevado que se necesita para la maduracion asegura que se logre la sedimentacion eficaz en prácticamente todas las condiciones.
