Abstract

Способ непрерывного ферментирования сусла, включающий ферментирование сусла биологически активными дрожжами для получения ферментированной жидкости, содержащей алкоголь; введение ферментированной жидкости, содержащей по меньшей мере 10 г/л биологически активных дрожжей, в резервуар для созревания; раздельное удаление осадка, содержащего дрожжи, и надосадочной жидкости из резервуара; и возможно, рециркуляцию по меньшей мере части осадка, содержащего дрожжи, в ферментируемое сусло; в котором время пребывания ферментированной жидкости в резервуаре для созревания превышает 6 ч. Данный способ предоставляет то преимущество, что он совмещает созревание и сепарацию дрожжей в одной стадии обработки, тогда как общепринятые непрерывные процессы требуют по меньшей мере двух отдельных стадий обработки, один - для сепарации дрожжей и один - для созревания. Во-вторых, данный способ очень надежен, поскольку относительно длительный период созревания обеспечивает достижение эффективной седиментации при практически любых условиях.
