Abstract

La presente se refiere a un producto alimenticio que comprende una masa sustancialmente solida basada en chocolate o análogo de chocolate, en contacto conun medio humedo en estado no congelado, cuyo tenor de agua libre se halla comprendido entre el4 5 y el 88%, teniendo dicha masa sustancialmente solida unadébil absorcion de agua bajo condiciones de conservacion apropiadas, caracterizado porque la masa sustancialmente solida de chocolate o análogo de chocolate,comprende, expresado en % enpeso: materia grasa de 43 a 80%; cacao seco y desgrasado, menos del 18%; leche descremada en polvo, menos del 17%; y azucares, másdel 13%; siendo la relacion en peso entre el cacao seco y desgrasado / (azucares y eventualmente leche descremada enpolvo), i nferior a 0,45, y siendo la masasolida tal que para un medio acuoso que tiene un tenor de agua libre local comprendido entre el 45 y 88%, la magnitud tau (tau) es inferior a 3, definiéndosela magnitud de tau mediante la siguiente ecuacion:tau = ((-[ agua] + 0,37) x MG) + (5,25 x [agua] - 1,67) x (S + PLE) + (26,2 x [agua] - 9,6) x C + (61 x[agua] - 14,5) x (S + PLE) x C, siendo: [agua] el tenor de agua libre local de la fase humeda en contacto (en g/g); MG es el tenor de materiasgrasas delchoco late o equivalente (en g/g); S + PLE es el tenor de azucares + leche descremeda en polvo, del chocolate o equivalente (en g/g); y C es el tenor de cacaoseco y desgrasado, del chocolate o equivalente (en g/g).
