Abstract
Un método para tratar un producto de carne paar reducir una poblacion microbiana en el mismo, método que comprende los pasos de: (a) tratar dicho productode carne con una composicion antimicrobiana que comprende: (i) una cantidad antimicrobianamenteefectiva que comprende al menos 2 ppm de uno o más ácidos mono-o diperoxicarboxílicos de hasta 12 átomos de C; y (ii) una cantidad antimicrobianamente efectiva que comprende al menos 20 ppm de uno o más ácidos carboxílicosde hasta 18 átomos de C; y( b) reducir la poblacion microbiana.
