背景技术
酒店传统模式下的厨房存在以下的问题:首先是厨师的工作效率不高,后厨工作能力有限。其次是厨房成本的控制问题。一般酒店对厨房的成本和毛利率都有限额规定。但传统模式下,厨房的成本控制本身没有一个量化的标准。
因此,预设计一整套的烹饪流水线,将以往传统的手工烹饪转化为工业化生产。同时设计有人机交互,不仅可以提高工作效率,也可相对保证菜品质量。
发明内容
多功能一体化烹饪机,其特征在于:
先后包括两个清洗机构、切菜机和炒菜机;
清洗机构其一是滚子刷式清洗机,其主体部分由带滚筒的的蓄水槽构成,在蓄水槽下方有保持架负责支撑,上方固定有喷头;在保持架下方安装电机,滚筒与电机是用皮带连接;

由原料倾倒系统、调味料添加系统、翻炒系统以及炊具清理系统构成了炒菜机;原料倾倒系统系统由锥形滑槽、气缸电机系统、以及棘轮机构组成;在梯形状的原料盒后方装有棘轮机构,动力由电机提供,在原料盒上方安装锥形滑槽,其固定于机架上;原料盒下方安装气缸,其前端安装伸缩的夹具,夹取原料盒,动力由电机提供;调味料添加系统,在锅盖上安装喷嘴,动力由电机提供;炒菜系统包括锅和凸轮滑块机构构成,锅的旋转由其后方的电机提供动力;锅柄处与凸轮滑块机构相连,由螺栓固定,凸轮滑块机构由两个凸轮滑块嵌套构成;蔬菜经由传送带通过滑槽到达原料添加系统,同时,位于原料盒下方的灶台点火,食用油经由喷嘴进入锅中;待油加热后,蔬菜由原料盒倾倒于锅中,调料由不同喷嘴喷入,合上锅盖,同时位于锅盖上的曲线立柱搅拌结构旋转对菜进行翻炒;锅经由凸轮结构模仿人炒菜过程中的颠锅动作进行炒菜;炒菜完成后,锅倾斜将菜倒于机械臂夹持的菜盘中;再经炊具清洗系统,对锅具进行清洗;辅助机械臂安装于滑槽上,由滑轮固定于滑槽上,可在滑槽上滑动。
本发明主要针对一般的烹饪过程,烹饪的过程分为三个步骤:
1、完成食材的清洗工作。
2、完成食材的加工。
3、对食材进行烹饪。
本发明主要完成上述三个步骤,是采用以下技术手段实现的:
首先,食材的清洗进分为了两个机构。其一是滚子刷式清洗机,其主体部分由带滚筒的的正方形蓄水槽构成,在其下方有保持架负责支撑,上方固定有喷头,均由螺栓固定。在保持架下方安装电机,滚筒与电机是用皮带连接。蔬菜由投入口放入,滚动至喷头下方。通过电动机的转动,带动皮带转动,使滚筒滚动,运载蔬菜向前运动。在滚筒的表面装有细小毛刷,在蔬菜行进的过程中,喷头喷水配合毛刷的转动从而去除根茎菜表皮污物,达到洗菜的目的。此类清洗机主要清洗土豆、萝卜等根茎类食材。
其二是筒式清洗机,其整体分为两个主要部件,一是负责清洗蔬菜的行星齿轮机构,二为蔬菜无动力倾倒机构。行星轮系洗菜机构由电机、电机固定架、行星轮系、齿轮固定架以及喷头构成。第一层保持架(27)上安装电动机,由螺栓固定;第二层保持架(28)安装固定带阶梯的太阳轮轴(5),在太阳轮轴的第三阶梯轴上有一根贯穿的圆轴,在其两端有两根支撑圆柱(31),隔板上挖出圆形的滑槽(32),支撑圆柱嵌入其中;第三层保持架(29),安装输出轴(6)的小齿轮与大齿轮以及内齿轮啮合;第四层保持架(30),用于输出轴的固定,既行星齿的固定,在其上挖出圆形滑槽(33),由一个内装有轴承的托台(34)在旋转时支撑起输出轴。输出轴的下端同联有一根带有毛刷的轴(35),与输出轴一起转动。两根轴清洗蔬菜。在第四层保持架地面安装喷头。蔬菜无动力倾倒机构主要由带弹簧固定柱、蓄水槽及带合页的可开合底板的矩形蔬菜框三部分组成,矩形蔬菜框嵌入蓄水槽内,固定柱上绕有弹簧,且支撑蓄水槽。两部分由圆形支撑柱连接,由螺栓进行固定。将待清洗蔬菜投入到蔬菜无动力倾倒部分的固定蔬菜框中随后由行星轮系部分开始工作,完成注水、搅拌工作,随后蔬菜无动力倾倒部分机构将清洗后的蔬菜倾倒出。此类清洗机主要清洗白菜、菠菜等叶类食材。
其次,对于食材的加工,由切菜机进行,切菜机主要包含一组杆机构,一套刀具可调结构,以及一套嵌套的带传动系统。杆结构主要由四连杆机构, 以及在连杆上有一点接触的竖直杆构成。刀具可调结构依靠竖直杆上挖孔,安装刀具,由螺栓对刀具进行固定,调整高度。传动系统,主要由内部传动与外部传送两部分构成,均为传送带传动,主动力是电机带动内部传送带传动。该切菜机可对多种蔬菜进行有效的预处理。蔬菜经由带隔板的传送带运送至切菜机构的传送带上,由嵌套的传动系统的外侧皮带,带动蔬菜向前;同时,由刀具可调结构及一组杆机构的配合,达到切菜的目的。可以调整刀具的个数、高度,以及刀具加工食材的速度等来满足不同的需求。
最后,针对食材的烹饪问题,在中餐烹饪过程中,翻炒烹饪最为常见,本组设计了由原料倾倒系统、调味料添加系统、翻炒系统以及炊具清理系统构成了炒菜机。原料倾倒系统系统由锥形滑槽、气缸电机系统、以及棘轮机构组成。在梯形状的原料盒后方装有棘轮机构,动力由电机提供,在原料盒上方安装一定角度的锥形滑槽,其固定于机架上。原料盒下方安装气缸,其前端安装伸缩的夹具,夹取原料盒,动力由电机提供。调味料添加系统,在锅盖上安装喷嘴,动力由电机提供。炒菜系统主要由锅和凸轮滑块机构构成,锅的旋转由其后方的电机提供动力。锅柄处与凸轮滑块机构相连,由螺栓固定,凸轮滑块机构由两个凸轮滑块嵌套构成。蔬菜经由传送带通过滑槽到达原料添加系统,同时,位于原料盒下方的灶台点火,食用油经由喷嘴进入锅中。待油加热一定时间后,蔬菜由原料盒倾倒于锅中,调料由不同喷嘴喷入,合上锅盖,同时位于锅盖上的曲线立柱搅拌结构旋转对菜进行翻炒。锅经由凸轮结构模仿人炒菜过程中的颠锅动作进行炒菜。炒菜完成后,锅倾斜将菜倒于机械臂夹持的菜盘中。再经炊具清洗系统,对锅具进行简单清洗。辅助机械臂安装于滑槽上,由滑轮固定于滑槽上,可在上滑动。

具体实施方式
流水线烹饪食材设备的功能主要由各个机器之间的相互协作实现。滚子刷式清洗机对根茎类食材清洗。将蔬菜从清洗机的投入口放入,滚动至清洗机喷头下方。通过电动机的转动,带动皮带(1)转动,进而使得清洗机构的滚筒滚动(3),运载蔬菜向前运动。在滚筒的表面安装有细小的毛刷,滚筒上方安装有压力喷头(2),在蔬菜行进的过程中,喷头喷水配合毛刷的转动从而去除根茎菜表皮污物,达到洗菜的目的。最后洗好的蔬菜经由下降板,滑落至传送带,运输向切菜机。桶式清洗机对根茎类食材清洗。桶式清洗机的清洗功能主要是通过行星轮系洗菜机构实现的。在整体上方的两个电机带动下,太阳轮(5)转动带动下方的行星轮(6)转动,行星轮下方的输出轴连有长杆,长杆对固定蔬菜筐(7)内的蔬菜进行搅拌,从而达到清洗的作用。随着喷头(4)喷出水量的增加,升降水槽(9)中的水量便会增加。升降水槽在重力的作用下下降,压缩四周的弹簧(10),同时固定蔬菜筐底板(8)会被下降的升降水槽勾开。蔬菜筐中的蔬菜便会落到下方的传送带上,运输向切菜机。
切菜机上的蔬菜通过外圈皮带(11)的转动到达切菜区域,切菜机下方电机通过内圈皮带(12)带动四杆机构中的曲柄(15)转动,曲柄带动连杆 (14)摆动。连杆的摆动让刀具固定架(13)在竖直滑槽(16)的约束下进行垂直运动,实现切菜的过程。切好的菜通过传送带运输到炒菜机。
切好的菜首先通过锥形滑槽滑入食材盒(17)中,食材盒预先通过人工的方式卡在食材盒保持架(18)内,食材盒保持架在槽轮机构(19)的带动下进行水平移动。保证食材都可以准确的进入到各个食材盒中。在未添加食材前,食材盒下方的气缸(20)是伸出的。添加好食材后气缸缩回,抱紧食材盒。电机转动带动气缸以及食材盒转动,将食材倾倒入锅中后返回。炒菜机中的灶台点火对锅进行加热,然后在控制锅盖开合的电机驱动下,盖上锅盖。在合上锅盖后,锅盖内的调料喷嘴(21)喷出调料,接着电机的旋转带动调料喷嘴转动达到一部分炒菜效果。锅盖打开,驱动电机(24)开始转动,带动凸轮(23)转动。锅柄与整个机构相连,凸轮的转动使得整个机构(22),达到模仿人的颠勺动作。炒完菜后,锅柄处的电机(25)转动,将菜倾倒入盘子中。辅助机械手(26)将盘子拾取送至出菜区。接着锅柄处的电机旋转,使得锅正面朝下,清洗用的水从喷水孔喷出对锅具进行简单清理。之后,锅具回归原位,准备进行下次烹饪。

Claims (1)

  1. 多功能一体化烹饪机,其特征在于:
    先后包括两个清洗机构、切菜机和炒菜机;
    清洗机构其一是滚子刷式清洗机,其主体部分由带滚筒的的蓄水槽构成,在蓄水槽下方有保持架负责支撑,上方固定有喷头;在保持架下方安装电机,滚筒与电机是用皮带连接;
    清洗机构其二是筒式清洗机,其整体分为两个主要部件,一是负责清洗蔬菜的行星齿轮机构,二为蔬菜无动力倾倒机构;行星轮系洗菜机构由电机、电机固定架、行星轮系、齿轮固定架以及喷头构成;第一层保持架(27)上安装电动机,由螺栓固定;第二层保持架(28)安装固定带阶梯的太阳轮轴(5),在太阳轮轴的第三阶梯轴上有一根贯穿的圆轴,在其两端有两根支撑圆柱(31),隔板上挖出圆形的滑槽(32),支撑圆柱嵌入其中;第三层保持架(29),安装输出轴(6)的小齿轮与大齿轮以及内齿轮啮合;第四层保持架(30),用于输出轴的固定及行星齿的固定,在其上挖出圆形滑槽(33),由一个内装有轴承的托台(34)在旋转时支撑起输出轴;输出轴的下端联有一根带有毛刷的轴(35),与输出轴一起转动;两根轴清洗蔬菜;在第四层保持架地面安装喷头;蔬菜无动力倾倒机构主要由带弹簧固定柱、蓄水槽及带合页的可开合底板的矩形蔬菜框三部分组成,矩形蔬菜框嵌入蓄水槽内,固定柱上绕有弹簧,且支撑蓄水槽;两部分由圆形支撑柱连接,由螺栓进行固定;
    切菜机主要包含一组杆机构,一套刀具可调结构,以及一套嵌套的传动系统;杆机构包括四连杆机构,以及在连杆上有一点接触的竖直杆;刀具可调结构依靠竖直杆上挖孔,安装刀具,由螺栓对刀具进行固定,调整高度;传动系统,包括内部传动与外部传送两部分,均为传送带传动,主动力是电机带动内部传送带传动;
