また、本発明におけるインスタントライスの製造方法は、二次加圧蒸煮工程において、原料米を撹拌しつつ加圧蒸煮する、そのため、当該工程において原料米同士が結着することがなく、全ての原料米の中心部まで万遍なくアルファ化される。
したがって、本発明のインスタントライスの製造方法によれば、全ての原料米を完全にアルファ化できるため、湯水を注ぐだけで食べることが可能な米飯に復元できるインスタントライスを製造することができる。
また、本発明におけるインスタントライスの製造方法は、テンパリング工程において、原料米を撹拌しつつ水分量を均一化する。これにより、各原料米の内部において水分のムラがなくなり、原料米同士の水分量も均一化される。
したがって、本発明のインスタントライスの製造方法によれば、湯水を注ぐだけで食べることが可能な米飯に復元できるインスタントライスをムラなく高品質に製造することができる。
したがって、本発明のインスタントライスの製造方法で使用する装置によれば、ムラのない高品質なインスタントライスを効率よく製造することができる。
また、本発明のインスタントライスの製造方法で使用する装置によれば、原料米に吸水を施し、該吸水を施した原料米を加圧蒸煮処理し、該加圧蒸煮処理した原料米を乾燥させるまでの一連の処理を同一のドラム内で行う。これにより、製造ラインが簡素となり、設備コストが大幅に低減できる。
したがって、本発明のインスタントライスの製造方法で使用する装置によれば、外観品位の良好なインスタントライスを効率よく製造することができる。
図1は、本発明の実施の形態におけるインスタントライスの製造工程のフロー図を示す。
本発明のインスタントライスは、一次加圧蒸煮工程(S1)、定量加水工程(S2)、テンパリング工程(S3)、二次加圧蒸煮工程(S4)、除圧工程(S5)、乾燥工程(S6)、精米工程(S7)、圧扁工程(S8)、乾燥工程(S9)、膨化工程(S10)、放冷工程(S11)の各工程を経て製造される。
加温用蒸気供給弁52及び加温用蒸気排出弁53の開放により、図示しないドラム外の加温用蒸気供給源から前記第二の円筒状部25内を介して前記加温パイプ51に加温用蒸気が供給される。そして、該加温用蒸気は、前記ドラム2内において前記加温パイプ51内を流動する。該加温用蒸気は、該ドラム2内を加温した後、前記第二の円筒状部25内を介して、ドラム外に排出される。
水供給弁58の開放により、前記加水パイプ56には、図示しないドラム外の水供給源から水が供給され、供給された水は前記ドラム2の端面の前記第一の円筒状部24内に供給される。そして、該水は、前記ドラム2内において前記加水パイプ56に設けられる複数の加水ノズル57から原料に加水される。前記加水ノズル57からの加水は、噴霧状又はシャワー状で加水される。
また、前記ドラム2には、前記一方の端面の側であって前記スクリーン62よりも端面側の位置に、図示しない安全弁が設けられる。前記ドラム2は、該ドラム2内の圧力が異常と判断される設定値を超えた場合、該ドラム2内の蒸気が前記安全弁から放出されることで、該ドラム2内の圧力を自動的に所定の設定値以下の値まで降下させることができる。
前記蒸気供給源から前記ドラム2内に蒸気が供給される際、前記ドラム開放弁64を開放しておけば、前記蒸気を供給する側とは反対側に位置する他方の端面から該ドラム2内の空気を排出することができる。これにより、前記ドラム2内の空気を効率よく蒸気に置き換えることができる。
また、前記ドラム2内に蒸気が供給される際に前記ドラム開放弁64を閉鎖することで、該ドラム2内を加圧状態とすることができる。
前記真空ポンプを利用して前記ドラム2内を減圧することで、該ドラム2内の原料を乾燥させることができる。
図4に示すように、前記第一の円筒状部24には、軸受71を介して第一の配管72が相対的に回転可能に接続される。
該第一の配管72には、前記蒸気供給源に連通する蒸気供給管73と、前記真空ポンプに連通する吸引管74が接続される。ここで、前記第一の配管72、前記蒸気供給管73、及び前記吸引管74は、一体に形成されるものでもよく、別体に形成されるものでもよい。
そして、前記第一の配管72及び第一の円筒状部24の各内周面と前記加水配管75の外周面との間に通路が形成される。該通路は、前記蒸気供給管73及び前記吸引管74と前記ドラム2内とを連通する。
該第二の配管81には、前記加温用蒸気供給源に連通する加温用蒸気供給管82と、前記加温パイプ51から前記加温用蒸気を排出する加温用蒸気排出管83が接続される。ここで、前記第二の配管81、前記加温用蒸気供給管82、及び前記加温用蒸気排出管83は、一体に形成されるものでもよく、別体に形成されるものでもよい。
さらに、前記円筒状壁84の内部には、前述のとおり、前記ドラム開放弁64の開放により前記ドラム2内を外気と連通可能とする外気連通パイプ63が配設される。外気連通パイプは、前記ドラム2とともに回転しないよう配設される。
そして、前記円筒状壁84の内周面と前記外気連通パイプ63の外周面との間には通路が形成される。該通路は、前記加温用蒸気供給管82と前記加温パイプ51とを連通する。また、前記第二の円筒状部25及び前記第二の配管81の各内周面と前記円筒状壁84の外周面との間には通路が形成される。該通路は、前記加温パイプ51と前記加温用蒸気排出管83とを連通する。
なお、ここでは、玄米又は分搗米(一部ぬかを残して精米した米、以下同じ)を原料米として用いる。
次に、上方に向けられた前記原料ハッチ21から前記加温されたドラム2内に原料米を投入し、該ドラム2を回転させて前記撹拌羽根54,55により原料米の撹拌を開始する。ドラム2内の加温及び該ドラム2の回転による原料米の撹拌は、前記乾燥工程(S6)が終了するまで継続して行われる。
前記蒸気供給弁61を開放し、前記蒸気供給源から連続して蒸気を供給する。この時、前記吸引弁65を閉鎖し、前記蒸気を供給する側と反対側の端面に位置する前記ドラム開放弁64を開放する。これにより、前記ドラム2内の空気が前記蒸気に押されるように前記ドラム開放弁64から排出され、前記ドラム2内の空気が効率よく蒸気に置き換わる。
前記ドラム2内の空気が前記蒸気に置き換わったら、前記ドラム2内への蒸気の供給は継続しつつ前記ドラム開放弁64を閉鎖する。そして、該ドラム内2が0.05~0.2MPaの所定圧力となるまで前記蒸気により加圧する。
そして、該ドラム2内が所定圧力に到達した時点から原料米の澱粉が表面部のみアルファ化されるまで2~5分間、前記蒸気供給弁61の開閉度を制御する。これにより、前記ドラム2内の圧力を一定に維持しつつ、前記原料米を加圧蒸煮処理する。
前記所定時間が経過した後は、前記蒸気供給弁61を閉鎖するとともに、前記ドラム開放弁64を開放する。そして、前記ドラム2内を0MPa、即ち大気圧へと除圧する。
前記ドラム開放弁64を閉鎖するとともに前記水供給弁58を開放し、図示しない前記水供給源から前記加水パイプ56に水を供給する。該加水パイプ56に設けられた複数の加水ノズル57から噴霧又はシャワーにより加水を行う。加水は、前記ドラム2内に余剰水が生じないペースで、原料米が25~35%、好ましくは25~32%の所定の水分量となるよう行う。ここで、前記ドラム2内の圧力は0MPaに維持されている。
この時、前記ドラム2内が前記加温パイプ51により加温されているから、前記原料米の吸水は短時間で終了する。また、前記ドラム2の回転は継続され、該ドラム2内において原料米が撹拌されているため、原料米同士が結着することがなく、全ての原料米は表面全体から万遍なく給水する。
また、前記一次加圧蒸煮処理が施された原料は、熱により非常に吸水しやすい状態となっている。この状態で、前記ドラム2内の加温により前記原料米が非常に吸水しやすい状態を維持したまま加水するため、より短時間で吸水を施すことが可能となる。また、排水が出ないよう加水量をコントロールすることも可能となる。
前記水供給弁58を閉鎖し、50~80℃の雰囲気下において20~30分間テンパリングを行う。ここで、前記ドラム2内の圧力は0MPaに維持されている。また、前記原料米の水分量は25~35%に維持されている。
この時、前記ドラム2の回転は継続され、該ドラム2内において原料米が撹拌されている。このため、各原料米の内部において水分のムラがなくなり、また、原料米同士の水分量も均一化される。
また、本工程では、十分な時間をかけてテンパリングを行うため、ミネラル等の機能性成分を富化することができる。
前記蒸気供給弁61を開放し、前記蒸気供給源から再び蒸気を供給する。この時、前記吸引弁65は閉鎖状態を維持し、前記ドラム開放弁64を開放する。これにより、前記ドラム2内の空気が前記蒸気に押されるように前記ドラム開放弁64から排出され、前記ドラム2内の空気が効率よく蒸気に置き換わる。
そして、該ドラム2内が所定圧力に到達した時点から5~10分間、前記蒸気供給弁61の開閉度を制御する。これにより、原料の澱粉が中心部までアルファ化される。そして、前記ドラム2内の圧力を一定に維持しつつ、前記原料米を加圧蒸煮処理する。
この時、前記ドラム2の回転は継続され、該ドラム2内において原料米が撹拌されている。このため、当該工程において原料米同士が結着することがなく、全ての原料米の中心部まで万遍なくアルファ化される。
前記所定時間が経過した後は、前記蒸気供給弁61を閉鎖するとともに、前記ドラム開放弁64を開放する。これにより、前記ドラム2内を0MPa、即ち大気圧へと除圧する。この時、蒸気の排出に伴い、原料米表面の粗熱が取り除かれる。
前記ドラム開放弁64を閉鎖するとともに前記吸引弁65を開放し、前記真空ポンプを作動させて前記ドラム2内を減圧する。その際、前記ドラム2内を120~240分間、-0.08~-0.09MPaの負圧の状態に維持することで、該ドラム2内の原料米を効率よく乾燥させることができる。
また、前記ドラム2内は、加温パイプ51により加温されており、前記乾燥が短時間で終了する。
乾燥終了後は、前記原料ハッチ21を上向きにして前記ドラム2の回転を停止させる。そして、前記加温用蒸気供給弁52及び加温用蒸気排出弁53を閉鎖し、前記加温用蒸気供給源から前記加温パイプ51への加温用蒸気の供給を停止する。また、前記真空ポンプの作動を停止させるとともに、前記吸引弁65を閉鎖する。さらに、前記ドラム開放弁64を開放し、前記ドラム2内の圧力を大気圧へと戻す。
この時、前記一連の処理の間、前記ドラム2の回転による撹拌羽根の作用により原料米は中央部へ移動されている。そのため、原料米をドラム2外へ容易に排出することができる。
次に、前記ドラム2から排出された原料米を、公知の縦型研削式精米機等を用いて精米し白米に仕上げる。ドラム2から排出された原料米は水分量が多く弾力があるため、これを精米(wet milling)しても砕粒が発生しにくく歩留まりが向上する。
公知の圧扁機を用い、前記白米をロール間隙0.25~0.4mmの一対のロール間に通過させて圧扁処理を行う。当該圧扁処理により、原料米の細胞同士の結合を緩めることができ、後述する膨化を容易とすることができる。
公知の乾燥機を用い、前記圧扁処理した原料米を温風により乾燥し、該原料米の水分量を12~16%に調整する。
特許文献1に記載された「膨化乾燥処理装置」などの公知の装置を用い、内部温度を200~250℃として、原料米の水分量が6~8%となるよう膨化処理する。当該膨化処理により、原料米が膨らみ内部に空洞が形成されて吸水性が向上し、湯水で短時間に復元できるインスタントライスに仕上げることができる。
膨化処理した原料米を常温の風により冷却する。当該冷却された原料米は、包装等の工程を経て製品化される。

Claims (10)
- 原料米を撹拌しつつ加圧蒸煮し、該原料米表面にアルファ化層を形成する一次加圧蒸煮工程と、
前記表面にアルファ化層が形成された原料米に加水する加水工程と、
前記加水された原料米の水分量を均一化するテンパリング工程と、
前記加水された原料米を撹拌しつつ加圧蒸煮し、該原料米の中心部までアルファ化する二次加圧蒸煮工程と、
前記中心部までアルファ化された原料米を乾燥する乾燥工程と、
前記乾燥した後の原料米を膨化する膨化工程と、
を備えることを特徴とするインスタントライスの製造方法。 - 前記加水工程は、原料米を撹拌しつつ加水し、
前記テンパリング工程は、原料米を撹拌しつつ該原料米が含有する水分量を均一化する請求項1記載のインスタントライスの製造方法。 - 周面に原料ハッチが設けられるとともに水平な軸心回りに回転可能に配設されるドラムと、
前記ドラム内に配設され、該ドラムの回転に伴い、前記原料ハッチから該ドラム内に投入された原料米を撹拌する撹拌手段と、
前記ドラム内に蒸気を供給する蒸気供給手段と、
前記ドラム内を外気と連通可能とする弁を有し、原料米を加圧蒸煮するに際し前記弁を閉じることで、前記ドラム内を前記蒸気供給手段から供給される蒸気により加圧可能とする圧力調整手段と、
前記ドラム内に配設され、前記ドラム内において原料米に加水する加水手段と、
前記ドラム内を減圧することにより原料米を乾燥させる乾燥手段と、
を備える装置を使用し、
前記ドラム内において、前記原料米を撹拌しつつ前記一次加圧蒸煮工程、前記加水工程、前記テンパリング工程、前記二次加圧蒸煮工程及び前記乾燥工程を実施する請求項1又は2記載のインスタントライスの製造方法。 - 前記一次加圧蒸煮工程は、0.05~0.2MPaの加圧状態で2~5分間、原料米を加圧蒸煮し、
前記加水工程は、原料米が含有する水分量が25~35%となるよう原料米に加水し、
前記テンパリング工程は、50~80℃の雰囲気下で20~30分間、原料米をテンパリングし、
前記二次加圧蒸煮工程は、0.1~0.2MPaの加圧状態で5~10分間、原料米を加圧蒸煮し、
前記乾燥工程は、原料米が含有する水分量が20~22%となるよう、-0.08~-0.09MPaの減圧状態で120~240分間、原料米を減圧乾燥する請求項3記載のインスタントライスの製造方法。 - 前記乾燥した後の原料米を精米する精米工程と、
前記精米した後の原料米を圧扁する圧扁工程と、
をさらに備え、
前記膨化工程は、該原料米が含有する水分量が6~8%となるよう、前記圧扁した後の原料米を200~250℃の温度により乾燥して膨化する請求項1乃至4の何れかに記載のインスタントライスの製造方法。 - 請求項1乃至5の何れかに記載の製造方法により得られるインスタントライス。
- 請求項1記載の一次加圧蒸煮工程、加水工程、テンパリング工程、二次加圧蒸煮工程及び乾燥工程を実施する装置であって、
周面に原料ハッチが設けられるとともに水平な軸心回りに回転可能に配設されるドラムと、
前記ドラム内に配設され、該ドラムの回転に伴い、前記原料ハッチから該ドラム内に投入された原料米を撹拌する撹拌手段と、
前記ドラム内に蒸気を供給する蒸気供給手段と、
前記ドラム内を外気と連通可能とする弁を有し、原料米を加圧蒸煮するに際し前記弁を閉じることで、前記ドラム内を前記蒸気供給手段から供給される蒸気により加圧可能とする圧力調整手段と、
前記ドラム内に配設され、前記ドラム内において原料米に加水する加水手段と、
前記ドラム内を減圧することにより原料米を乾燥させる乾燥手段と、
を備えることを特徴とするインスタントライスの製造方法で使用する装置。 - 前記加水手段は、前記ドラム内に配設される加水パイプであり、
前記乾燥手段は、前記ドラム内に連通可能とされる真空ポンプを有し、
前記一次加圧蒸煮工程で、前記加水パイプにより、表面にアルファ化層が形成された後の原料米に加水し、
前記二次加圧蒸煮工程で、前記真空ポンプによって前記ドラム内を減圧することにより、中心部までアルファ化された後の原料米を乾燥させる請求項7記載の装置。 - 前記蒸気供給手段は、前記ドラムの第一の端面中央に形成される開口を介して該ドラム内に蒸気を供給し、
前記圧力調整手段は、前記ドラムの第二の端面中央に形成される開口を介して該ドラム内を外気と連通可能とする請求項7又は8記載の装置。 - 前記ドラムの内周面における前記第一の端面側には、前記蒸気供給手段から供給される蒸気を該ドラム内に均一に分散させるスクリーンが配設される請求項9記載の装置。
