Abstract
La presente invención tiene como objetivo proporcionar un método de fabricación de arroz instantáneo que se puede restaurar en arroz comestible vertiendo simplemente agua caliente. El método de fabricación de arroz instantáneo de la presente invención incluye una primera etapa de cocción al vapor bajo presión para cocer al vapor la materia prima de arroz bajo presión mientras que la materia prima de arroz está siendo agitada, y formar una capa gelatinizada en una superficie de la materia prima de arroz, una etapa de hidratación para hidratar la materia prima de arroz que tiene la capa gelatinizada formada en su superficie, una etapa de templado para hacer que el contenido de humedad de la materia prima de arroz hidratada sea uniforme, una segunda etapa de cocción al vapor bajo presión para cocer al vapor la materia prima de arroz hidratada bajo presión mientras que la materia prima de arroz se agita y gelatinizar la materia prima de arroz en un centro, una etapa de deshidratación para deshidratar la materia prima de arroz que se gelatiniza en el centro, y una etapa de expansión para expandir la materia prima de arroz deshidratada.
