Abstract
本発明の課題は、発酵乳およびホエイタンパク質を利用した食品に特有の乳臭さを抑えた乳加工食品を提供することである。 可食性ゲルの製造方法であって、β-ラクトグロブリンを、原材料の総タンパク質中に70~100重量%の割合となるように配合する、原材料配合工程、前記原材料配合工程後の加熱工程、前記加熱工程後の微生物による発酵工程、を含む、前記方法により、本発明の課題は解決される。
Description
本発明は、ホエイを利用した乳加工食品およびその製造方法などに関する。
乳・乳製品は栄養価値の高さおよび風味の良さから、老若男女を問わず、世界中で広く愛用されている。ヨーグルトおよび各種のチーズなどに代表される乳加工食品(乳製品)は、カゼインを主要なタンパク質源とする発酵乳であり、乳酸発酵、pHの低下、およびタンパク質分解酵素(レンネットなど)などの作用によって凝固させる。カゼイン以外にも、ホエイタンパク質を主要なタンパク質源とし、熱変性の作用によって凝固させたリコッタチーズなども知られている。
近年、乳・乳製品のうち特に、ホエイの機能性の高さが注目されている。しかしながら、ホエイの利用は、乳幼児用の調製粉乳、要介護者用の流動食、および運動選手用の健康食品などの特殊な食品および医薬品などに限定されている。これまでに、ホエイタンパク質を利用した食品として、ホエイタンパク質を加水分解酵素で限定分解した後に、加熱処理して得られたミセル状ホエイタンパク質を乳酸発酵させた発酵乳が知られている(特許文献1)。
その他のホエイを利用した食品として、ホエイタンパク質濃縮物(WPC)またはホエイタンパク質単離物(WPI)を利用したゲル状食品であって、アイスクリームなどの他の食品と混ぜ合わせたものが特許文献2および3に記載されている。さらに、特許文献4~6においては、ホエイタンパク質にゼラチンまたはポリ-L-リシンを添加することにより、テクスチャーまたはゲルの安定性が増加したゲル状組成物およびそれら製造方法が記載されている。
乳・乳製品は、多くの場合に洋風の食卓(洋食)において、そのまま食事の一部として、またはデザート(オヤツなど)として食べられる。また、調味料およびソースなどにも利用されるが、一般的にその食シーンや用途が制限されている。そして、中華料理や和風の食卓(和食)となると、乳・乳製品を食する機会はさらに少なくなり、せいぜい調味料などに添加して利用される程度となるため、その用途などが著しく制限されることとなる。
さらに、従来の発酵乳およびホエイタンパク質を利用した食品は、乳臭さを強く感じるため、和食と組み合わせにくく、和風の風味へのアレンジが難しい。また、他の食品と混ぜ合わせて使用するなど、その用途が限られていた。そのため、乳・乳製品は、栄養価値および機能性が高いにも拘わらず、その利用が十分とは言えない状況にあった。
したがって、本発明では、中華料理や和食にも合う乳加工食品であって、特に、食事やおかずにもなり得る食事タイプとして中華・和風にも利用できる乳加工食品およびその製造方法を提供することを目的とする。

本発明者らは、上記課題を解決するため、鋭意研究を重ねる中で、ホエイタンパク質のうちβ-ラクトグロブリン(β-LG)を主要なタンパク質源として、ホエイタンパク質をゲル化することにより、新規な可食性ゲルが得られることを見出し、さらに研究を進めた結果、本発明を完成させるに至った。
本発明者らは、β-ラクトグロブリンを総タンパク質中に高濃度で含有させることにより、乳臭さの弱い、クリアな風味および滑らかな食感の乳加工食品が得られることを見出した。さらに、β-ラクトグロブリンを含む原材料を、微生物で発酵させることにより、ゲルの形成における安定化を可能とした。
すなわち、本発明は、以下の可食性ゲルおよびその製造方法に関する。

本発明は、酸味や雑味が少なく、無味・無臭に近い新規な可食性ゲルの提供を可能とする。乳製品特有の乳臭さがほとんどないため、他の食品と混ぜ合わせることなく調理および摂取することができ、洋食だけでなく中華料理および和食に合わせたアレンジも可能である。特に、醤油、味噌、ポン酢などの和風の調味料と一緒に食べるとおいしく摂取することができる。
本発明のゲルは、β-ラクトグロブリンを主成分としないホエイタンパク質由来のゲルに見られるような褐色または白濁にはならず、適度な透明性を有して半透明に調整することができ、色彩のアレンジも容易となる。さらに、適度な破断強度を有するため、好ましい食感を与えるだけでなく、様々な形状へとアレンジすることも可能である。また、酸性であっても比較的高いpHに調整することもでき、従来の乳製品の使用制限を受けることなく、様々な食べ方に適用できる。
例えば、洋食に馴染みのない和食を好む日本の高齢者には、和風の風味へアレンジし、和食の一部として、乳加工食品を提供することにより、栄養および機能性の高い、乳・乳製品を効率的かつ効果的に摂取することを可能とする。また、食事の内容によっては、本発明の乳加工食品を主食の代用とすることも可能にする。
さらに、本発明は、ホエイタンパク質、特にβ-ラクトグロブリンを効率的に摂取することを可能とし、その栄養生理学的な効果も効率的に得ることができる。
本発明の製造方法によると、加熱殺菌しても凝集しにくいため、後発酵タイプの製造工程を利用することもできる。また、本発明において乳酸発酵を利用した場合などは、緩やかなpHの低下により滑らかなゲルの形成を可能とし、ゲルの冷蔵安定性も増加する。
本発明の1つの側面は、ホエイタンパク質、特にβ-ラクトグロブリン(β-LG)を高濃度に含有するホエイタンパク質の可食性ゲルおよびそれを含む飲食品に関する。

本発明の可食性ゲルは、ゲルを維持するためのタンパク質量を含有すればよく、総タンパク質量は、好ましくは原材料中に2.5~14%、より好ましくは3~11%、さらに好ましくは3.5~9%で含まれる。ホエイタンパク質以外の固形成分を含んでもよいが、ホエイタンパク質の比率(含有量)が高いことが好ましい。
本発明の可食性ゲルは、ゲルを維持するためのタンパク質量を含有すればよく、総タンパク質量は、好ましくは原材料中に2.5~14%、より好ましくは3~11%、さらに好ましくは3.5~9%で含まれる。ホエイタンパク質以外の固形成分を含んでもよいが、ホエイタンパク質の比率(含有量)が高いことが好ましい。
「ホエイ」とは、例えば牛乳から脂肪、カゼイン、脂溶性ビタミンなどを除去した際に残留する水溶性成分であり、「ホエイタンパク質」には、ホエイの主要なタンパク質などを限外濾過(Ultrafiltration:UF)法などで濃縮処理した後に乾燥処理したホエイタンパク質濃縮物(Whey Protein Concentrate:「WPC」)、ホエイを精密濾過(Microfiltration:MF)法や遠心分離法などで脂肪を除去してからUF法で濃縮処理した後に乾燥処理した脱脂WPC(低脂肪・高タンパク質)、ホエイの主要なタンパク質などをイオン交換樹脂法やゲル濾過法などで選択的に分画処理した後に乾燥処理したホエイタンパク質分離物(Whey Protein Isolate:「WPI」)、ナノ濾過(Nanofiltration:NF)法や電気透析法などで脱塩処理した後に乾燥処理した脱塩ホエイ、ホエイ由来のミネラル成分を沈殿処理してから遠心分離法などで濃縮処理したミネラル濃縮ホエイ、α-ラクトアルブミン(α-LA)、およびβ-ラクトグロブリン(β-LG)などが含まれる。
本発明の可食性ゲルは、高濃度のβ-ラクトグロブリンを含有する。ゲル中のカゼイン、α-ラクトアルブミン、ペプチドなどの比率が多くなると、ゲルに乳臭さおよび雑味を与える傾向にあり、β-ラクトグロブリン濃度が高くなると、ゲルの透明性が増加して、さらにクリアな風味(無味・無臭)になる傾向にある。
原材料中のβ-ラクトグロブリンは、好ましくは2~10%、より好ましくは2.5~8%、さらに好ましくは3~7%で含まれる。また、原材料の総タンパク質中のβ-ラクトグロブリンは、好ましくは70~100%、より好ましくは75~100%、さらに好ましくは80~100%で含まれる。

本発明の可食性ゲルは、ゲルの形態を維持する程度の強度を有すればよいが、好ましくは40~500g、より好ましくは45~400g、さらに好ましくは50~300gの破断強度を有する。また、酸性であっても比較的高いpHにすることができ、好ましくは5.0~6.0、より好ましくは5.2~6.0、さらに好ましくは5.5~6.0のpHを有する。
本発明の可食性ゲルは、半透明または白色であり、乳臭さがなく、無味・無臭に近い。濁り(白濁など)が抑えられた本発明のゲルの色は、例えば、色差のL値(明度指数、L*)などによって測定および評価することができる。限定されるものではないが、本発明のL値は、好ましくは50~70、より好ましくは53~68、さらに好ましくは55~65である。
本発明の可食性ゲルは、従来のホエイタンパク質のゲル状食品などと比較しても、その用途は多様である。例えば、他の食品と混ぜ合わせたり、組み合わせて食してもよいが、ゲル自体をそのまま、または調味料などと一緒に食することができる。この場合、特に醤油、味噌、ポン酢などの和風の調味料を好適に使用することができる。また、必要に応じて、砂糖やグラニュー糖などの甘味料を添加してもよい。
また、色彩のアレンジも容易であり、適度な破断強度を有するため、ゲルを加工して様々な形状および色彩を有するゲル状食品へとアレンジすることができる。例えば、各種の着色料と混ぜ合わせたり、組み合わせて食してもよいが、天然の色素を含む食品などと一緒に食することができる。この場合、カラフルな飾り物などとして好適に使用することができる。
本発明の可食性ゲルおよびそれを含む飲食品の風味の評価は、官能試験などによって測定することができる。例えば、限定されるものではないが、分析型官能評価として、2点識別法、3点識別法、順位法などの識別型試験を用いることができる。また、スコアリング法、プロフィール法などの記述型試験を用いてもよく、定量的記述分析法(QDA)によっても評価することもできる。
本発明の可食性ゲルおよびそれを含む飲食品は、以下に述べる本発明の製造方法および実施例に記載の方法によって作製することができる。
本発明の1つの側面は、ホエイタンパク質、特にβ-ラクトグロブリン(β-LG)を高濃度に含有するホエイタンパク質の可食性ゲルおよびそれを含む飲食品の製造方法に関する。本発明の製造方法は、以下の工程を含むことができるが、これらに限定されるものではない。
原材料配合工程
原材料配合工程では、本発明の可食性ゲルの原材料を配合する。本発明において、主な原材料は、ホエイタンパク質などのホエイ抽出物および濃縮物であるが、好ましくはβ-ラクトグロブリンおよび/またはβ-ラクトグロブリン含有量の高いホエイタンパク質が配合される。これらは、複数の種類を同時に用いてもよく、目的に応じて適宜組み合わせることも可能である。
原材料配合工程では、本発明の可食性ゲルの原材料を配合する。本発明において、主な原材料は、ホエイタンパク質などのホエイ抽出物および濃縮物であるが、好ましくはβ-ラクトグロブリンおよび/またはβ-ラクトグロブリン含有量の高いホエイタンパク質が配合される。これらは、複数の種類を同時に用いてもよく、目的に応じて適宜組み合わせることも可能である。
β-ラクトグロブリンおよびβ-ラクトグロブリン含有量の高いホエイタンパク質は、例えばホエイから選択的に分離することによって得られる。かかる分離方法には、イオン交換クロマトグラフィー法、ゲル濾過法、限外濾過法、等電点分離法、高分子多荷電解質による共沈法、塩析法、温度処理分離法などの手法を含み、特開昭61-268138号公報および特開昭63-39545号公報などにも開示されている。
また、原材料として、β-ラクトグロブリンそのもの、および/またはβ-ラクトグロブリン含有量が高い市販のWPCおよびWPIなどを使用することもできる。例えば、ALACEN WPI 895(Fonterra 社)などを用いてもよい。そして、ホエイタンパク質として、好ましくは70~100%、より好ましくは75~100%、さらに好ましくは80~100%のβ-ラクトグロブリン含有量のものが使用される。
その他の原材料として、水および発酵スターターの他に、ホエイ粉、乳糖、α-ラクトアルブミン、カゼインなどを加えることができるが、これらに限定されるものではない。また、これらの他に、ゲル成分とは別に食品などを添加してもよい。
本発明の一態様において、水および発酵スターター以外の原材料は、好ましくはホエイ由来の成分のみからなる。

本発明の製造方法において、原材料に配合する総タンパク質量は、ゲルを維持するための量であればよいが、好ましくは原材料中に2.5~14%、より好ましくは3~11%、さらに好ましくは3.5~9%の割合で配合される。また、ホエイタンパク質以外の固形成分を含んでもよいが、ホエイタンパク質の比率(含有量)が高いことが好ましい。
本発明の製造方法において、原材料は高濃度のβ-ラクトグロブリンを含有する。原材料中のカゼイン、α-ラクトアルブミン、ペプチドなどの比率が多くなると、ゲルに乳臭さおよび雑味を与える傾向にあり、β-ラクトグロブリン濃度が高くなると、ゲルの透明性が増加して、さらにクリアな風味(無味・無臭)になる傾向にある。
原材料中のβ-ラクトグロブリンは、好ましくは2~10%、より好ましくは2.5~8%、さらに好ましくは3~7%で含まれる。また、原材料の総タンパク質中のβ-ラクトグロブリンは、好ましくは70~100%、より好ましくは75~100%、さらに好ましくは80~100%で含まれる。

本発明の製造方法において、固形分は、好ましくは3~15%、より好ましくは3.5~12%、さらに好ましくは4~10%で、原材料中に含まれる。また、灰分の含有量が低いと、加熱処理後にゲルが凝集しにくくなるため、灰分は、好ましくは0.01~1%、より好ましくは0.1~0.5%で原材料中に含まれる。

加熱工程
加熱工程において、原材料配合工程により得られた原材料の混合物を、加熱処理する。その結果、タンパク質の物性が変化するだけでなく、原材料を殺菌することができる。
本発明の製造方法において、加熱工程における加熱温度は、ゲルの形成が阻害されない程度で、また殺菌などの効果が得られる程度でよく、好ましくは80~150℃であり、より好ましくは80~120℃、さらに好ましくは80~100℃である。また、好ましい加熱時間は、加熱温度により適宜決定され、好ましくは1秒間~5分間、より好ましくは5秒間~5分間、さらに好ましくは1分間~5分間であるが、特に限定されるものではない。また、特に高温の場合には、その温度に達するまでの時間であってもよい。
加熱工程において、原材料配合工程により得られた原材料の混合物を、加熱処理する。その結果、タンパク質の物性が変化するだけでなく、原材料を殺菌することができる。
本発明の製造方法において、加熱工程における加熱温度は、ゲルの形成が阻害されない程度で、また殺菌などの効果が得られる程度でよく、好ましくは80~150℃であり、より好ましくは80~120℃、さらに好ましくは80~100℃である。また、好ましい加熱時間は、加熱温度により適宜決定され、好ましくは1秒間~5分間、より好ましくは5秒間~5分間、さらに好ましくは1分間~5分間であるが、特に限定されるものではない。また、特に高温の場合には、その温度に達するまでの時間であってもよい。
加熱処理した後には、発酵工程に必要な微生物を添加できる程度に冷却される。好ましくは30~50℃、より好ましくは35~45℃、さらに好ましくは40~45℃に冷却されるが、これらに限定されるものではない。
発酵工程
本発明の製造方法には、微生物による発酵を利用することができる。発酵工程は、好ましくは酸を産生する微生物によって行われ、典型的には、乳酸菌による乳酸発酵である。

本発明の製造方法において、発酵工程は、好ましくは加熱工程後にスターターを混合して開始する。スターターとして、発酵乳の製造に一般的に用いられるスターターを用いてもよく、混合スターターであってもよい。本発明において使用し得る微生物は、例えば、乳酸菌やビフィズス菌があげられ、1種または2種以上を含んでもよい。
乳酸菌として、本発明は、これに限定されないが、ラクトバシラス属、ストレプトコッカス属、エンテロコッカス属、ラクトコッカス属、ペディオコッカス属、ロイコノストック属の菌であることが好ましい。例えば、ラクトバシラス・ブルガリカス菌、ラクトバシラス・アシドフィルス菌、ラクトバシラス・ガセリ菌、ラクトバシラス・カゼイ菌、ラクトコッカス・ラクティス菌、ラクトコッカス・クレモリス菌、ストレプトコッカス・サーモフィルス菌などが挙げられる。そして、ラクトバシラス・ブルガリカス菌、ストレプトコッカス・サーモフィルス菌であることが好ましい。
ビフィズス菌として、本発明は、これに限定されないが、ビフィドバクテリウム・ビフィダム菌、ビフィドバクテリウム・ロンガム菌、ビフィドバクテリウム・ブレベ菌、ビフィドバクテリウム・インファンティス菌、ビフィドバクテリウム・カテヌラータム菌、ビフィドバクテリウム・アドレッセンティス菌、ビフィドバクテリウム・シュードロンガム菌などが挙げられる。
スターターは、発酵が行える程度の量でよく、特に限定されないが、水を含む原材料に対して、菌数が105~107CFU/mL程度となるように調整および添加することが好ましい。また、スターターの添加は、例えば発酵乳を製造する際に用いられる方法に従って行うことができ、微生物(例えば、乳酸菌)の凍結濃縮物や高濃度培養液などを使用することができる。
本発明の製造方法において、発酵温度などの発酵条件は、原材料に添加された微生物の種類などを考慮して調整することができる。例えば、乳酸菌を用いた場合、発酵温度を30~50℃に維持することができ、好ましくは35~45℃、さらに好ましくは40~45℃である。発酵時間は、スターターや発酵温度などに応じて調整することができ、例えば、35~45℃の場合には3~7時間であり、40~45℃の場合には3~5時間である。
本発明の可食性ゲルの形成は、徐々に行われることが好ましく、発酵による緩やかなpHの低下によって、滑らかなゲルを形成することができる。また、酸性であっても比較的高いpHに調整することができるため、酸味を抑えたゲルを製造することができる。例えば、乳酸発酵の場合、ゲル形成過程におけるpHは、好ましくは5.0~6.0であり、より好ましくは5.2~6.0、さらに好ましくは5.5~6.0である。
本発明の一態様において、ホエイ粉を原材料に配合することができる。ホエイ粉を添加することにより、微生物による、特に乳酸菌による発酵を、短時間であっても効率的に行うことができ、発酵時間および冷蔵保存性を調節することも可能である。配合するホエイ粉は、発酵工程の条件など必要に応じて設定することができるが、好ましくは原材料中に0.2~1.0%であり、より好ましくは0.3~0.7%、さらに好ましくは0.35~0.5%である。
なお、本明細書において使用する「ホエイ粉」(ホエイパウダー)の用語は、乳等省令で定義されるような、乳を乳酸菌で発酵させ、または乳に酵素もしくは酸を加えてできた乳清(ホエイ)から、ほとんど、すべての水分を除去し、粉末状にしたものを包含する。
本発明の一態様において、ハードヨーグルトの製造方法のように、容器に原料を充填させ、その後に発酵させる「後発酵」を好適に使用することができる。したがって、既存の後発酵の発酵乳の製造工程をそのまま利用することができる。一方で、目的によっては、発酵後に発酵させたものを容器に充填させる「前発酵」を使用してもよい。
以下の実施例によって、本発明を詳述するが、本発明は、各実施例に限定されるものではない。
原材料として、ホエイタンパク質には、WPC(Hilmar 8800、Hilmar社)、WPI(Lacprodan DI 9224、Arla Foods社)およびWPI(ALACEN WPI 895、Fonterra社)の他に、α-ラクトアルブミン(Davisco Foods International社)およびβ-ラクトグロブリン(Davisco Foods International社)を用いた。
WPC(Hilmar 8800、Hilmar社)は、タンパク質含量が78%であり、β-ラクトグロブリンは、前記タンパク質中に23%の割合で含まれ、α-ラクトアルブミンは、前記タンパク質中に約75%の割合で含まれる。WPI(Lacprodan DI 9224、Arla Foods社)は、タンパク質含量が87%であり、β-ラクトグロブリンは、前記タンパク質中に47%の割合で含まれ、α-ラクトアルブミンは、前記タンパク質中に約50%の割合で含まれる。WPI(ALACEN WPI 895、Fonterra社)は、タンパク質含量が90%であり、β-ラクトグロブリンは、前記タンパク質中に80%の割合で含まれ、α-ラクトアルブミンは、前記タンパク質中に約20%の割合で含まれる。
また、α-ラクトアルブミン(Davisco Foods International社)は、タンパク質含量が90%以上であり、前記タンパク質中にα-ラクトアルブミンおよびβ-ラクトグロブリンは、それぞれ90%以上および5%未満の割合で含まれる。β-ラクトグロブリン(Davisco Foods International社)は、タンパク質含量が90%以上であり、前記タンパク質中にα-ラクトアルブミンおよびβ-ラクトグロブリンは、それぞれ5%未満および90%以上の割合で含まれる。
その他の原材料として、乳糖(Leprino Foods社)、ホエイ粉(乳糖含量75~80%;ホエイパウダー、明治乳業社)および乳酸菌(明治ブルガリアヨーグルトから分離した、ラクトバシラス・ブルガリカス菌とストレプトコッカス・サーモフィルス菌、明治乳業社)を用いた。
実施例1
WPCおよびWPIの種類が可食性ゲルの風味へ与える影響
各試料番号(試料番号:1-1、1-2および1-3)について、表1に示す原材料の配合で乳加工食品(可食性ゲル)を作製した。
各試料の原材料(乳酸菌を除く)を、表1に記載の配合で調整した。
WPCおよびWPIの種類が可食性ゲルの風味へ与える影響
各試料番号(試料番号:1-1、1-2および1-3)について、表1に示す原材料の配合で乳加工食品(可食性ゲル)を作製した。
各試料の原材料(乳酸菌を除く)を、表1に記載の配合で調整した。
原材料(乳酸菌を除く)を調整して溶解した後、95℃において5分間それぞれ加熱殺菌した。加熱後、原材料を40~45℃まで冷却した後、乳酸菌(明治ブルガリアヨーグルトから分離した、ラクトバシラス・ブルガリカス菌とストレプトコッカス・サーモフィルス菌、明治乳業社)を、105~107CFU/mLとなるように添加した後、様々な形状の容器へ充填した。充填後、その容器を恒温庫に移し、43℃、3時間で発酵した。発酵後、その得られたゲルを冷蔵庫で5℃に冷却し、7日間以上保存した。
各試料番号のゲルについて、官能評価(専門パネル:5名)を行ったところ、各試料のタンパク質量を同程度に一致させても、ホエイタンパク質の種類によって、風味が異なっていた。その中で、β-ラクトグロブリン含量の最も高い試料番号1-3のゲルについてのみ、乳臭さが抑えられ、クリアな風味が得られた。なお、各官能評価において、5人の専門パネル全員から肯定的な評価(乳臭さが抑えられたクリアな風味)を得られた場合に、表中に「○」と記載した。
実施例2
総タンパク質中のβ-ラクトグロブリン(β-LG)比率が可食性ゲルの風味へ与える影響
実施例1と同様の方法で、各試料番号(試料番号:2-1、2-2、2-3、2-4および2-5)について、表2に示す原材料の配合で乳加工食品(可食性ゲル)を作製した。
総タンパク質中のβ-ラクトグロブリン(β-LG)比率が可食性ゲルの風味へ与える影響
実施例1と同様の方法で、各試料番号(試料番号:2-1、2-2、2-3、2-4および2-5)について、表2に示す原材料の配合で乳加工食品(可食性ゲル)を作製した。
各試料番号のゲルについて、官能評価(専門パネル:5名)を行ったところ、原材料の総タンパク質中のβ-ラクトグロブリンの比率(割合)が74%以上のゲル(試料番号:2-4および2-5)において、クリアな風味が得られた。一方で、総タンパク質中のβ-ラクトグロブリンの比率(割合)が低い試料(試料番号:2-1、2-2および2-3)においては、クリアな風味は得られなかった。また、得られたゲルの色差(L値、a値、b値)は、分光色差計カラーアナライザーTC1800J(東京電色社)で測定した。
官能評価と目視評価の結果から、総タンパク質中のβ-ラクトグロブリンの比率(割合)が高くなるほど、雑味が少なく、無味・無臭となり、さらにゲルの濁りが減少して、半透明のゲルが形成されることが示された。一方で、α-ラクトアルブミンの比率が高くなるほど、ゲルが濁って、雑味が多くなる傾向にあることが示された。
実施例3
総タンパク質中のβ-ラクトグロブリン(β-LG)比率の物性に対する影響
実施例1と同様の方法で、各試料番号(試料番号:3-1、3-2、3-3、3-4および3-5)について、表4に示す原材料の配合で乳加工食品(可食性ゲル)を作製した。

実施例1と同様の方法で、各試料番号(試料番号:3-1、3-2、3-3、3-4および3-5)について、表4に示す原材料の配合で乳加工食品(可食性ゲル)を作製した。
各試料番号のゲルについて、破断強度の試験および官能評価(専門パネル:5名)を行ったところ、ゲル全体のβ-ラクトグロブリンの濃度が2.16%以上のゲル(試料番号:3-2、3-3、3-4および3-5)において、クリアな風味が得られた。また、それらゲルにおいて41.0g以上の適度な硬さを有するゲルが得られた。
なお、破断強度の試験では、テクスチャアナライザー TA.XT Plus(Stable Micro Systems, SMS社)を使用し、P5/S軸で測定した。

官能評価と目視評価の結果から、実施例2の結果と一致して、原材料の総タンパク質中のβ-ラクトグロブリンの濃度が高くなるほど、雑味が少なく、無味・無臭となり、さらにゲルの濁りが減少して、半透明のゲルが形成されることが示された。
実施例4
ホエイ粉が可食性ゲル形成における発酵性に与える影響
実施例1と同様の方法で、各試料番号(試料番号:4-1、4-2、4-3、4-4、4-5、4-6、4-7、4-8および4-9)について、表6に示す原材料の配合で乳加工食品(可食性ゲル)を作製した。また、各試料におけるpHの変化を、経時的に調べた結果を表6および図1に示す。
ホエイ粉が可食性ゲル形成における発酵性に与える影響
実施例1と同様の方法で、各試料番号(試料番号:4-1、4-2、4-3、4-4、4-5、4-6、4-7、4-8および4-9)について、表6に示す原材料の配合で乳加工食品(可食性ゲル)を作製した。また、各試料におけるpHの変化を、経時的に調べた結果を表6および図1に示す。
原材料にホエイ粉を配合することにより、乳酸発酵の発酵性が変化し、pHの低下率も変化することが示された。ホエイ粉および乳糖のいずれも添加していない試料(試料番号:4-1)に対して、ホエイ粉のみを添加した試料(試料番号:4-2、4-3、4-4、4-5、4-6、4-7および4-8;ホエイ粉0~3.0%)および乳糖のみを添加した試料(試料番号:4-9;乳糖3.6%)とを、それぞれ比較すると、乳糖のみを添加した場合よりも、ホエイ粉を添加した場合において、より効果的に乳酸発酵が進行した。また、その発酵性はホエイ粉の濃度に依存的であることが示された。
表7および図2の結果から、低濃度のホエイ粉(例えば、0.3~0.5%)を配合した場合には、乳糖を添加した場合と比較しても冷蔵保存時(0~16日)のpHの低下率を低くすることができ、冷蔵保存時におけるゲルpHの安定性も調節可能であることが示された。
実施例5
加熱温度が可食性ゲルの物性に与える影響
各試料番号(試料番号:5-1、5-2、5-3、5-4、5-5および5-6)について、表8に示す原材料の配合で加熱殺菌を50~130℃(5分または達温)で行い、それ以外は実施例1と同様の方法で、乳加工食品(可食性ゲル)を作製した。
加熱温度が可食性ゲルの物性に与える影響
各試料番号(試料番号:5-1、5-2、5-3、5-4、5-5および5-6)について、表8に示す原材料の配合で加熱殺菌を50~130℃(5分または達温)で行い、それ以外は実施例1と同様の方法で、乳加工食品(可食性ゲル)を作製した。
表8の結果から、加熱温度が80~130℃の場合(試料番号:5-3、5-4、5-5および5-6)において、適度な硬さのゲルが得られ、加熱温度が110℃で最も硬いゲルが得られた。一方で、加熱温度が不十分な場合(試料番号:5-1および5-2)において、この条件では十分なゲルの形成が確認されなかった。
実施例6
可食性ゲルと和食の風味との相性に関する評価
実施例1と同様の方法で、各試料番号(試料番号:6-1、6-2、6-3および6-4)について、表9に示す原材料の配合で乳加工食品(可食性ゲル)を作製した。和風の調味料および食材との風味の相性を調べた(専門パネル:5名)結果を表9に示す。なお、官能評価において、5人の専門パネル全員から肯定的な評価(風味の相性がよい評価)を得られた場合に、表中に「○」と記載した。
可食性ゲルと和食の風味との相性に関する評価
実施例1と同様の方法で、各試料番号(試料番号:6-1、6-2、6-3および6-4)について、表9に示す原材料の配合で乳加工食品(可食性ゲル)を作製した。和風の調味料および食材との風味の相性を調べた(専門パネル:5名)結果を表9に示す。なお、官能評価において、5人の専門パネル全員から肯定的な評価(風味の相性がよい評価)を得られた場合に、表中に「○」と記載した。
ゲルを醤油、味噌、ポン酢または海苔の佃煮と組み合わせて摂取した結果、いずれの場合においても、その相性に優れていた。また、ゲルは適度な硬さと透明性を有していたため、多様な色彩を付加することや、多様な形状に加工することが容易にできた(図3)。
本発明は、ホエイを利用した乳加工食品およびその製造方法などに関し、独特の乳製品を提供するものとして、食品産業に貢献するものである。
Claims (12)
- β-ラクトグロブリンを含む可食性ゲルであって、該β-ラクトグロブリンを原材料の総タンパク質中に70~100重量%の割合で配合してなる、前記可食性ゲル。
- β-ラクトグロブリンを、原材料中に2~10重量%の割合で配合してなる、請求項1に記載の可食性ゲル。
- 破断強度が、40~500gである、請求項1または2に記載の可食性ゲル。
- pHが5.0~6.0である、請求項1~3のいずれか一項に記載の可食性ゲル。
- 半透明および/または無味無臭である、請求項1~4のいずれか一項に記載の可食性ゲル。
- 可食性ゲルの製造方法であって、
β-ラクトグロブリンを、原材料の総タンパク質中に70~100重量%の割合となるように配合する、原材料配合工程、
前記原材料配合工程後の加熱工程、
前記加熱工程後の微生物による発酵工程、
を含む、前記方法。 - 加熱工程が、80~150℃で行われる、請求項6に記載の方法。
- 発酵工程が乳酸発酵であり、pHが5.0~6.0でゲルが形成される、請求項6または7に記載の方法。
- 原材料配合工程において、原材料中に0.2~1.0重量%のホエイ粉をさらに配合する、請求項6~8のいずれか一項に記載の方法。
- 発酵工程が後発酵で行われる、請求項6~9のいずれか一項に記載の方法。
- 請求項6~10のいずれか一項に記載の方法によって製造された、可食性ゲル。
- 請求項1~5および11の可食性ゲルを含む、飲食品。
