Abstract
Description
例えばオレンジ、レモン、リンゴ等の果汁と紅茶抽出物を含有する果汁入り紅茶飲料に関し、そのpHを4.0~4.6に調製することにより、果汁の風味と紅茶の風味を同時に味わうことが可能な果汁入紅茶飲料とすることが提案されている(特許文献1)。
そこで本発明は、苦渋味や収斂味が抑制されていて低刺激でやさしく感じられる、新たな酸性紅茶飲料を提供せんとするものである。
本実施形態に係る容器詰紅茶飲料(以下「本紅茶飲料」と称する)は、甘味料と果汁を含有する紅茶飲料であって、酸度及び甘辛度が所定範囲にあることを特徴とする容器詰紅茶飲料である。
紅茶抽出液は、例えば紅茶葉を溶媒に浸漬させて撹拌した後、固液分離手段によって紅茶葉を除去して得ることができる。
但し、市販の紅茶抽出液(紅茶濃縮物含む)を使用することもできる。
紅茶の茶期や形状、産地等の紅茶の種類は、特に限定するものではないが、本紅茶飲料においては、特にテオガリン量を所望範囲に調整することを目的としてその種類を選択するのが好ましい。例えば葉の大きな茶葉はテオガリン含有量が大きい傾向があり、例えばダージリンやニルギリなどはテオガリン含有量が多い茶葉であり、逆にウバやディンブラなどはテオガリン含有量が少ない茶葉である。よって、このような観点に基づいて、茶葉の種類を選択すると共に、必要に応じて複数の種類の茶葉を混合することにより、所望のテオガリン含有量に調整することができる。
現在では、予めカフェイン量を低減させた茶葉も市販されている。
但し、抽出方法及び抽出条件等を特に限定するものではなく、例えば加圧抽出を行うこともできる。
抽出に用いる湯水は、純水、硬水、軟水、イオン交換水、天然水などのほか、アスコルビン酸含有水溶液及びpH調製水等を例示することができる。
抽出用液にアスコルビン酸ナトリウム等の有機酸又は有機酸塩類を添加してもよい。
本紅茶飲料における紅茶由来の固形量に関しては、全体固形量に対する、紅茶由来の固形量の割合が2.0~8.0%であるのが好ましい。紅茶由来の固形量が2.0%以上であれば、コク味(濃度感)に欠けることがなく、8.0%以下であれば、渋味及び収斂味を強く感じることがない。
かかる観点から、全体固形量に対する、紅茶由来の固形量の割合は2.0~8.0%であるのが好ましく、特に3.0%以上、7.0%以下、中でも特に4.0%以上、5.0%以下であるのが好ましい。
なお、紅茶由来の固形量は、紅茶抽出液及び、紅茶濃縮物の添加量によって調整することができる。
本紅茶飲料に加える果汁の種類は特に限定するものではない。例えばオレンジ、ピーチ、ホワイトグレープ、りんご、レモン、いちご、グレープフルーツ、マンゴー、梨、ベルガモットなどを挙げることができ、1種類又は2種類以上を組み合わせて用いることができる。
なお、紅茶葉の種類と果汁の相性、組み合わせる果汁同士の相性を考慮して果汁を選択するのが好ましい。
本紅茶飲料における果汁量(日本農林規格(JAS)準拠)は、適度な紅茶感と果汁感を得る観点から、0.05質量%以上、5.0質量%以下であるのが好ましく、特に0.1質量%以上、3.0質量%以下であるのがより好ましい。
本紅茶飲料は、甘味料を含むものであるが、甘味料の種類は特に限定するものではなく、糖類、人工甘味料のいずれであってもよい。
糖類としては、例えば砂糖、ブドウ糖、果糖、ショ糖、還元麦芽糖などを挙げることができる。
人工甘味料としては、例えばキシリトール、ステビア抽出物、パラチノース、アスパルテーム、アセスルファムカリウム、ステビア、サッカリン、サッカリンナトリウム、スクラロースなどを挙げることができる。
甘辛度と酸味をバランスよく調整する観点からは、甘辛度に影響する糖類と、甘辛度には影響しないが、香味の調整を行う点とから、人工甘味料とを併用するのが好ましい。
本紅茶飲料におけるカフェイン含有量は、0.001~0.005質量%であるのが重要である。カフェイン含有量が0.001質量%以上であれば、のどごしが良好である一方、0.005質量%以下であれば苦味が強いこともない。
よって、かかる観点から、カフェイン含有量は0.001~0.005質量%であるのが重要であり、好ましくは0.002以上、0.004以下、中でも特に0.0025以上、0.0035以下であるのがさらに好ましい。
なお、本紅茶飲料におけるカフェイン含有量は、上述のようにカフェインを低減した茶葉を使用したり、抽出条件を調整したりするなどによって調整することができる。
テオガリン(Theogallin,3-galloylquinic acid)は、渋味様の味を呈し、本格的な紅茶様の香味の形成に大きく影響する。
本紅茶飲料におけるテオガリン含有量は0.001質量%~0.002質量%であるのが好ましい。テオガリン含有量が0.001質量%以上であれば、紅茶のコク味(濃度感)が感じられ、本格的な紅茶感を得ることができる一方、テオガリン含有量が0.002質量%以下であれば、渋味が強くなり過ぎて紅茶感が突出するようなことがない点で好ましい。
かかる観点から、テオガリン含有量は0.001~0.002質量%が好ましく、特に0.0012質量%以上、0.0018質量%以下、中でも0.0013質量%以上、0.0015質量%以下がさらに好ましい。
本紅茶飲料においては、苦渋味と渋味による刺激を少なくする観点から、テオガリン含有量に対するカフェイン含有量の比率を調整するのがさらに好ましい。
すなわち、本紅茶飲料においては、テオガリン含有量に対するカフェイン含有量が1.0~4.9であるのが好ましい。本紅茶飲料において、テオガリン含有量に対するカフェイン含有量1.0~4.9であれば、苦渋味と渋味による刺激を減少させることができる。
かかる観点から、本紅茶飲料においては、テオガリン含有量に対するカフェイン含有量の比率は、1.0~4.9であるのが好ましく、特に1.5以上、4.5以下、その中でも特に2.0以上、4.0以下であるのがさらに好ましい。
本紅茶飲料の酸度は0.02~0.08%であることが重要である。
酸度が0.02%以上であれば、爽快感を感じることができ、0.08%以下であれば、酸味が強すぎて刺激が強いと感じることがない。
かかる観点から、本紅茶飲料における酸度は0.02~0.08%であるのが重要であり、特に0.035以上、0.065以下、その中でも特に0.04以上、0.055以下であるのが好ましい。
なお、本紅茶飲料の酸度は、主に果汁の種類と含有量、酸味料の種類と添加量等によって調整することができる。
甘辛度は、糖度(全体固形量)と酸度で表される指標である。
本紅茶飲料においては、酸度が0.02~0.08%にある時の甘辛度が1.50~2.50にあることが重要である。甘辛度が1.50以上であれば、酸味が強過ぎることがなく刺激が強いこともない一方、甘辛度が2.50以下であれば、甘味が強過ぎることがなく、残味を感じることもないから好ましい。
よって、本紅茶飲料においては、酸度が0.02~0.08%にある時の甘辛度は1.50~2.50であるのが好ましく、特に1.65以上、2.35以下であるのがより好ましく、その中でも1.80以上、2.20以下であるのがさらに好ましい。
なお、本紅茶飲料の甘辛度は、例えば糖類(砂糖・果糖)の種類と量、果汁の種類と量、紅茶抽出物の添加量、酸味料の添加量など調整によって調整することができる。
さらに本紅茶飲料においては、後味および爽快味の観点から、酸味料含有量に対する酒石酸含有量の比率(酒石酸/酸味料)が0.30~0.80であるのが好ましい。この酒石酸/酸味料が0.30以上であれば、鋭い酸味にならず、爽快でやわらかい酸味が得られる点で好ましく、0.80以下であれば、後味に渋味が感じられない点で好ましい。
よって、本紅茶飲料における酒石酸/酸味料の比率は0.30~0.80であるのが好ましく、特に0.4以上、0.7以下であるのがより好ましく、その中でも0.45以上、0.65以下であるのがさらに好ましい。
なお、本紅茶飲料の酒石酸含有量/酸味料含有量比率は、例えば酒石酸の添加量によって調整することができる。
本紅茶飲料におけるテアフラビン類含有量は、0.0002質量%~0.0012質量%であるのが好ましい。0.0002質量%以上であれば、経時的色調変化と、適度な紅茶感を得られる点で好ましい一方、0.0012質量%以下であれば、経時的変化が抑制されつつ、紅茶と果汁のバランスを有する点で好ましい。
よって、かかる観点から、本紅茶飲料におけるテアフラビン類含有量は0.0002質量%~0.0012質量%であるのが好ましく、特に0.0004質量%以上、0.0008以下、その中でも特に0.0006質量%以上、0.0007質量%以下であるのがさらに好ましい。
なお、テアフラビン類含有量は、添加する紅茶抽出液の作製条件(茶葉種類、抽出温度、抽出条件)等により調整することができる。
本紅茶飲料においては、適度な紅茶の渋味と香味、経時的な色調変化抑制の観点から、テアフラビン含有量に対するテオガリン含有量の比率を調整するのがさらに好ましい。
すなわち、本紅茶飲料においては、テアフラビン含有量に対するテオガリン含有量の比率(テオガリン/TF)が1~15であるのが好ましい。本紅茶飲料において、テオガリン/TFが1~15であれば、適度な紅茶感と経時的色調変化を少なくすることができる。
かかる観点から、本紅茶飲料においては、テアフラビン含有量に対するテオガリン含有量の比率(テオガリン/TF)は、1~15であるのが好ましく、特に1.5以上、5以下、その中でも特に1.85以上、2.5以下であるのがさらに好ましい。
また、本紅茶飲料におけるカテキン類含有量は、0.002質量%~0.006質量%であるのが好ましい。0.002質量%以上であれば、コク味(紅茶の濃度感)を感じられる点で好ましい一方、0.006質量%以下であれば、渋味及び収斂味を感じることがない点で好ましい。
よって、かかる観点から、本紅茶飲料におけるカテキン類含有量は0.002質量%~0.005質量%であるのが好ましく、特に0.0025質量%以上、0.0045質量%以下、その中でも特に0.0030質量%以上、0.0040質量%以下であるのがさらに好ましい。
なお、カテキン類含有量は、紅茶抽出液及び、紅茶濃縮物の添加量により調整することができる。
本紅茶飲料における全体固形量は、3.2~4.6%であるのが好ましい。3.2%以上であれば、水っぽくならず厚みが感じられる点で好ましい一方、4.6%以下であれば、ほど良い濃度感を得られ、後味の残味を感じない点で好ましい。
よって、かかる観点から、本紅茶飲料における全体固形量は3.2~4.6%であるのが好ましく、特に3.5%以上、4.3%以下、その中でも特に3.7%以上、4.2%以下であるのがさらに好ましい。
なお、本紅茶飲料の全体固形量は、例えば糖類(砂糖・果糖)の量、紅茶抽出物の量、果汁の量その他添加物の添加量により調整することができる。
本紅茶飲料におけるpHは、3.0~5.0であるのが好ましい。3.0以上であれば、白濁現象(クリームダウン)が発生しにくく、また、酸味が強すぎない点で好ましい。5.0以下であれば、酸味を感じられないということがなく、適度な酸味を得られる点で好ましい。
よって、かかる観点から、本紅茶飲料におけるpHは3.0~5.0であるのが好ましく、特に3.5以上、4.5以下、その中でも特に3.7以上、4.2以下であるのがさらに好ましい。
本紅茶飲料は、紅茶抽出液(紅茶濃縮物含む)と、果汁と、甘味料と、その他の添加物とを混合して調合し、容器充填及び殺菌を行って製造することができる。
紅茶抽出液(紅茶濃縮物含む)に果汁、その他の添加物、例えば甘味料、酸味料、酒石酸やその他の配合物、例えば水(硬水、軟水、イオン交換水、天然水その他)、アスコルビン酸、アスコルビン酸ナトリウム、重曹、糖類、デキストリン、香料、乳化剤、安定剤、或いはその他の呈味原料などのいずれか或いはこれらのうち二種以上の組合わせを添加し、主にpH調整、濃度調整、味の調整を行うようにすればよい。
加熱殺菌は、缶飲料であれば、例えば95℃に加熱(ホットパック)した後充填し、転倒殺菌を行なう方法が挙げられる。必要に応じ、充填後、レトルト殺菌(例えば、適宜加圧下(1.2kg/cm2など)、121℃で7分間加熱殺菌する。)を行なう方法、プラスチックボトル飲料の場合にはUHT殺菌(調合液を115℃~150℃で1秒~数十秒保持する。)を行なっても差し支えない。
前述のように、カフェインを0.001~0.005質量%に調整し、かつ、酸度を0.02~0.08%の範囲に調整し、且つ、酸度が前記範囲にある時の糖度(全体固形量)と酸度で表される甘辛度を1.50~2.50の範囲に調整することにより、容器詰紅茶飲料の香味を調整することができる。
本発明において「容器詰紅茶飲料」とは、容器に詰めた紅茶飲料の意であるが、同時に希釈せずに飲用できる紅茶飲料の意味でもある。
また、「カテキン類」とは、カテキン(C)、ガロカテキン(GC)、カテキンガレート(Cg)、ガロカテキンガレート(GCg)、エピカテキン(EC)、エピガロカテキン(EGC)、エピカテキンガレート(ECg)及びエピガロカテキンガレート(EGCg)を示し、その量はこれらの合計量の意味である。
また、「テアフラビン類」とは、テアフラビン(TF)、テアフラビン3-ο-ガレート(TF3-G)、テアフラビン3’-ο-ガレート(TF3'-G)、及びテアフラビン3,3'-ジ-ο-ガレート(TF3,3'-G)を示し、その量はこれらの合計量の意味である。
Gotoらの方法(T.Goto,Y.yoshida,M.kiso and H.Nagashima,Journal of chromatographyA 749 (1996)295-299)に準拠し、HPLC法により測定した。
実施例及び比較例で得られた容器詰紅茶飲料を、0.2μm親水性PTFEフィルター(日本ミリポア(株))で濾過した後、以下の条件にてUPLCを用いて、テオガリンを定量した。

実施例及び比較例で得られた容器詰紅茶飲料にメタリン酸溶液加え抽出した。
抽出液を定容後、HPLC法(高速液体クロマトグラフ法)により測定した。
Andrew P. Nelsonらの方法(Andrew P. Nelson,Rodney J. Green, Karl V. Wood,Mario G. Ferruzzi,Journal of Chromatography A,1132(2006)132)に準拠し、テアフラビン類の定量を行った。
実施例及び比較例で得られた容器詰紅茶飲料を50%アセトニトリルで希釈、定容後、HPLC法(高速液体クロマトグラフ法)により測定した。
各実施例・比較例の条件で、茶葉のみを抽出・濾過して(果汁・糖類・酸味料添加前)抽出液を得、この抽出液をBrix測定装置(アタゴ社製DD-7)で測定し、得られた数値を、各実施例・比較例における最終メスアップ量に換算して、表に示した。
下記、Brix測定方法により測定した。
実施例及び比較例で得られた容器詰紅茶飲料(サンプル)並びに果汁に純水を加えた後、電位差滴定法により0.1mol/L水酸化ナトリウム溶液でpH8.3まで測定した。
水酸化ナトリウム溶液の滴定量から酸度(クエン酸換算)を算出した。算出は測定機器により実施し、機器の表示値を酸度として記録した。
測定装置の温度を所定の温度に調整し、測定装置(屈折計)を校正し、実施例及び比較例で得られた容器詰紅茶飲料(サンプル)を測定装置のプリズム上に薄く塗布し、測定(機器の表示値を記録)した。
pHメーターをpH標準溶液による校正を実施し、実施例及び比較例で得られた容器詰紅茶飲料(サンプル)をビーカーに採取し、pHメーターのガラス電極をサンプル中に挿入し、測定(機器の表示値を記録)した。
上記の方法で測定した全体固形量と酸度とから、次の式で甘辛度を算出した。
甘辛度=0.86×全体固形量(Bx)-1.16×酸度-1.31
スリランカ産ブレンド紅茶葉100gを、60℃に加熱したイオン交換水3000gに加えて、撹拌しながら3分間抽出した。得られた紅茶抽出液をステンレスメッシュ(20メッシュ)で濾過し、さらにステンレスメッシュ(80メッシュ)で濾過した。その濾液を、15℃まで冷却した後、ネル濾過して、紅茶抽出液Aを得た。
この紅茶抽出液Aは、可溶性固形分を0.9質量%、カフェインを0.04質量%、テオガリンを0.008質量%、テアフラビン類を0.005質量%含有していた。
ダージリン紅茶葉100gを、30℃に加熱したイオン交換水3000gに加えて、撹拌しながら20分間抽出した。得られた紅茶抽出液をステンレスメッシュ(20メッシュ)で濾過し、さらにステンレスメッシュ(80メッシュ)で濾過した。その濾液を、15℃まで冷却した後、ネル濾過して、紅茶抽出液Bを得た。
この紅茶抽出液Bは、可溶性固形分を0.9質量%、カフェインを0.048質量%、テオガリンを0.015質量%、テアフラビン類を0.001質量%含有していた。
市販の超臨界処理済み紅茶葉(Plantextrakt社製)100gを、60℃に加熱したイオン交換水3000gに加えて、撹拌しながら10分間抽出した。得られた紅茶抽出液をステンレスメッシュ(20メッシュ)で濾過し、さらにステンレスメッシュ(80メッシュ)で濾過した。その濾液を、15℃まで冷却した後、ネル濾過して、さらに回転薄型式エバポール機にて濃縮し、紅茶濃縮物を得た。
この紅茶濃縮物は、可溶性固形分を50.0質量%、カフェインを0.14質量%、テオガリンを0.44質量%、テアフラビン類を0.17質量%含有していた。
紅茶抽出液A500.0g、紅茶濃縮物21.0gに、りんご果汁(ストレート)を40.0g、酒石酸を1.1g、クエン酸を1.0g、グラニュー糖を183g、果糖を100g加えて希釈後、pHが3.80になるように重曹を添加し、さらに香料を10g添加し、そして全量が10000gになるように純水でメスアップした。
このように調合した紅茶飲料を、95℃達温まで加熱して殺菌した後、PETボトル容器に充填し冷却して、容器詰紅茶飲料(サンプル)を得た。
実施例1のサンプル作成方法を基準とし、表1及び表2に示すように、紅茶抽出液A乃至B、紅茶濃縮物および各種添加物の添加量を変更して、容器詰紅茶飲料(サンプル)を作製した。
実施例1-12及び比較例1-10で得られた飲料(温度25℃)について、10人の熟練した審査官(パネラー)が、酸味、甘味、苦渋味、収斂味の4項目について以下の基準で1~4の4段階評価で点数を付け、平均点を四捨五入して採点した。総合評価については、評価項目の平均点が3.5以上を「◎」、3以上3.5未満を「○」、2以上3未満を「△」、1以上2未満を「×」として評価した。

表1及び2の結果、カフェイン含有量と、酸度と、甘辛度とがある範囲内にあれば、ほど良い酸味と甘味を呈し、苦渋味及び収斂味が少なく、飲用時の刺激が少ない紅茶飲料が得られるということが分かった。
このような点からすると、カフェインを0.001~0.005質量%含有し、かつ、甘味料と果汁を含有する紅茶飲料において、酸度が0.02~0.08%の範囲にあり、かつ酸度が前記範囲にある時の糖度(全体固形量)と酸度で表される甘辛度が1.50~2.50の範囲に調整することにより、苦渋味および収斂味が抑制されていて低刺激でやさしく感じられるにようにすることができる、と考えることができる。
このような点からすると、苦渋味および渋味のバランスの観点から、テオガリン含有量に対するカフェイン含有量の比率は1.0~4.9であるのが好ましく、特に1.5以上、4.5以下、その中でも特に2.0以上、4.0以下であるのがさらに好ましい、と考えることができる。
実施例1のサンプル作成方法を基準とし、表3に示すように、紅茶抽出液A、紅茶濃縮物および各種添加物の添加量を変更して、容器詰紅茶飲料(サンプル)を作製した。
実施例13-17で得られた飲料(温度25℃)について、10人の熟練した審査官(パネラー)が、後味、爽快味の2項目について以下の基準で1~4の4段階評価で点数を付け、平均点を四捨五入して採点した。総合評価については、評価項目の平均点が3.5以上を「◎」、3以上3.5未満を「○」、2以上3未満を「△」、1以上2未満を「×」として評価した。
渋味が残らず、スッキリとした後味について次の基準で評価した。

3:良い
2:普通
1:悪い
爽快かつ、やわらかな酸味について次の基準で評価した。
4:特に良い
3:良い
2:普通
1:悪い
表3の結果、酸味料含有量に対する酒石酸含有量の比率(酒石酸/酸味料)がある範囲にあれば、爽快且つやわらかな酸味を有し、渋味が残らずスッキリとした後味の紅茶飲料を得られることが分かった。
このような点からすると、後味および爽快味の観点から、酸味料含有量に対する酒石酸含有量の比率(酒石酸/酸味料)は0.30~0.80であるのが好ましく、特に0.4以上、0.7以下であるのがより好ましく、その中でも0.45以上、0.65以下であるのがさらに好ましいと考えることができる。
実施例1のサンプル作成方法を基準とし、表4に示すように、紅茶抽出液A、紅茶濃縮物および各種添加物の添加量を変更して、容器詰紅茶飲料(サンプル)を作製した。
実施例18-23で得られた飲料(温度25℃)について、10人の熟練した審査官(パネラー)が、香り、コク味の2項目について以下の基準で1~4の4段階評価で点数を付け、平均点を四捨五入して採点した。総合評価については、評価項目の平均点が3.5以上を「◎」、3以上3.5未満を「○」、2以上3未満を「△」、1以上2未満を「×」として評価した。
鼻に抜ける香り立ちについて次の基準で評価した。

3:良い
2:普通
1:悪い
紅茶の濃度感、風味について次の基準で評価した。
4:特に良い
3:良い
2:普通
1:悪い
表4の結果、全体固形量に対する紅茶由来の固形量の割合がある範囲にあれば、鼻に抜ける香り立ちに優れ、適度な紅茶の濃度感(コク味)を有する紅茶飲料を得られることが分かった。
このような点からすると、全体固形量に対する、紅茶由来の固形量の割合は、香りとコク味の観点から、2.0~8.0%であるのが好ましく、特に3.0%以上、7.0%以下、中でも特に4.0%以上、5.0%以下であるのが好ましいと考えることができる。
実施例1のサンプル作成方法を基準とし、表5に示すように、紅茶抽出液A、紅茶濃縮物および各種添加物の添加量を変更して、容器詰紅茶飲料(サンプル)を作製した。
実施例24-26で得られた飲料(温度25℃)について、10人の熟練した審査官(パネラー)が、後味、果汁の質感の2項目について以下の基準で1~4の4段階評価で点数を付け、平均点を四捨五入して採点した。総合評価については、評価項目の平均点が3.5以上を「◎」、3以上3.5未満を「○」、2以上3未満を「△」、1以上2未満を「×」として評価した。
爽やかなのどごし、スッキリとした後味について次の基準で評価した。
4:特に良い
3:良い
2:普通
1:悪い
果汁の濃度感、香味について次の基準で評価した。
4:特に良い
3:良い
2:普通
1:悪い
表5の結果、加える果汁の酸度がある範囲にあれば、飲用時の後味、果汁の濃度感および香味がより優れたものになることが分かった。
このような点からすると、紅茶飲料の後味及び果汁の質感を高める観点から、加える果汁の酸度は3.0%以下、特に0.1%以上、2.0%以下、その中でも特に0.2%以上、1.0%以下であるのが好ましいと考えることができる。
Claims (6)
- カフェインを0.001~0.005質量%含有し、かつ、甘味料と果汁を含有する容器詰紅茶飲料であって、酸度が0.02~0.08%の範囲にあり、かつ酸度が前記範囲にある時の糖度(全体固形量)と酸度で表される甘辛度が1.50~2.50の範囲にあることを特徴とする容器詰紅茶飲料。
- 酸味料含有量に対する酒石酸含有量の比率が0.30~0.80であることを特徴とする請求項1記載の容器詰紅茶飲料。
- 糖度(全体固形量)に対する、紅茶由来の固形量の割合が2.0~8.0%であることを特徴とする請求項1又は2記載の容器詰紅茶飲料。
- 添加する果汁の酸度(ストレート換算)が3.0%以下であることを特徴とする請求項1~3の何れかに記載の容器詰紅茶飲料。
- カフェインを0.001~0.005質量%含有し、かつ、甘味料と果汁を含有する容器詰紅茶飲料の製造方法であって、酸度を0.02~0.08%の範囲に調整し、且つ、酸度が前記範囲にある時の糖度(全体固形量)と酸度で表される甘辛度を1.50~2.50の範囲に調整することを特徴とする容器詰紅茶飲料の製造方法。
- カフェインを0.001~0.005質量%に調整し、かつ、酸度を0.02~0.08%の範囲に調整し、且つ、酸度が前記範囲にある時の糖度(全体固形量)と酸度で表される甘辛度を1.50~2.50の範囲に調整することを特徴とする容器詰紅茶飲料の香味調整方法。
