Abstract

La présente invention a pour objet un procédé de bioconversion de matières grasses d'origine animale ou de mélanges de matières grasses d'origines animale et végétale. Cette bioconversion est mise en ÷uvre au sein d'une émulsion, résultant de la dispersion d'une phase aqueuse dans une phase lipidique continue, ladite phase lipidique étant essentiellement constituée d'huiles obtenues par fractionnement physique et/ou distillation moléculaire. Application: obtention de concentrés d'arômes, de matières grasses modifiées.
