Abstract

Un producto similar a mayonesa con un pH de 2 a 5, caracterizadoporque comprende de 55 a 85% de grasa, por lo menos 0.1% de proteínas de leche o proteínas vegetales, desnaturalizadas a un grado entre 70 y 80%, por lo menos 1% de azúcar y 0.5% de sal y de 0.1 hasta 20% de vinagre.Un procedimiento para la elaboración de un producto similar a mayonesa, de conformidad con cualquiera de las reivindicaciones precedentes, caracterizado porque se llevan acabo las siguientes etapas:- Preparar una solución en agua que contiene de 5 a 40% de proteínas de leche o proteínas vegetales, 10 a 40% de azúcar y 1 a 10% de sal,- calentar la mezcla- enfriar la mezcla- acidificar el producto obtenido con 0.1 hasta 20% de vinagre- homogenizar el producto con aceite para obtener una emulsión fina.
