Abstract

Metod pripremanja mesnih proizvoda sa uljem, naznačen time, što se tokom pripremanja mesnih proizvoda sa uljem ne dodaje aditiv ili se dodaje najviše jedan aditiv, pomenuti aditiv bira se iz grupe koja sadrži emulgujuća sredstva, stabilišuća sredstva i sredstva za zgušnjavanje, a ulje se inkorporiše u mesne proizvode direktnim dodavanjem u dva koraka, pri čemu metod uključuje korak:(i) mešanja usitnjenog mesa sa NaCl ili njegovim zamenama i vodom/ledom u odgovarajućoj mašini za mešanje, koji se karakteriše dodatnim koracima:(ii) dodavanja, u mešavinu (i), prvog dela ulja, što predstavlja 55-80 težinskih % ukupne količine ulja koja će se dodati tokom pripremanja mesnih proizvoda sa uljem, i daljeg mešanja dobijene mešavine,(iii) dodavanja, u mešavinu (ii), drugog dela ulja, što predstavlja 45-20 težinskih % ukupne količine ulja koja će se dodati tokom pripremanja mesnih proizvoda sa uljem, i daljeg mešanja dobijene mešavine,(iv) punjenja mešavine iz koraka (iii) u materijale za punjenje ili konzerve, ili oblikovanja mešavine iz koraka (iii) u željeni oblik,(v)(v.1) izlaganja punjene ili u konzervi ili oblikovane mešavine, termičkom tretmanu ili tretmanu konzerviranja i/ili(v.2) hlađenja ili smrzavanja punjene ili oblikovane mešavine, i(vi) pakovanja punjenog ili u konzervi ili oblikovanog finalnog proizvoda,pri čemu je najviše jedan aditiv odabran iz grupe koja se sastoji od emulgujućih sredstava, stabilišućih sredstava i sredstava za zgušnjavanje, dodat u koracima (i), (ii) ili (iii).Prijava sadrži još 10 patentnih zahteva.
