本发明涉及一种肉制品保鲜剂,属于食品保鲜技术领域。
背景技术
香肠、熏肉等肉制品是深受大众喜爱的传统食品。目前,市售肉制品的保鲜方法,常采用在生产过程中添加硝酸钠、亚硝酸钠、山梨酸钾等化学合成品的发色剂和防腐剂来抑制肉制品的腐败霉变,从而保持肉制品的呈色及后熟风味,延长存放期。然而,过量使用这些化学合成品的发色剂和防腐剂,存在风味、口感欠缺和引起食物中毒等现象,且长期食用含有硝酸钠、亚硝酸钠的肉制品,存在致癌性,对人体健康有巨大威胁。

本发明的目的是提供一种肉制品保鲜剂。

本发明肉制品保鲜剂由以下重量份的物质组成:蜂胶超临界CO2提取物10-25份、蔗糖脂肪酸酯2-5份、卵磷酯1-2.5份、乙醇72-82.5份、茶多酚3-6份、维生素2-8份、生姜精油1-3份、柠檬酸5-15份。
本发明的有益效果是:
本发明所述保鲜剂质量及其保鲜效果更好,更稳定,具有高效抗菌、防霉、抗氧化及成膜性能,水溶性好,可大大提高肉制品的抗氧化性,还可以延缓色泽和风味的变化,色泽鲜亮稳定。
