本发明涉及一种保鲜剂,具体地说是一种高效安全食品防腐保鲜剂。该食品保鲜剂按计算重量份组成:食品级竹醋液5-40份,亚硫酸钠20-30份,乳酸链球菌素1-1.5份,氯化钙1-3份,柠檬酸钠1-10份,低聚壳聚糖0.1-0.5份,茶多酚0.1-0.5份,水余量。本发明的目的是提供一种生产成本低,效果理想的食品保鲜剂。

技术领域
本发明涉及一种保鲜剂,具体地说是一种高效安全食品防腐保鲜剂。
背景技术
食品在生产和贮藏过程中,受微生物、氧气等作用会发生腐败、霉变,给人们的生活和生产造成很大的损失,为了提高食品的保存期,许多食品都是采取添加防腐保鲜剂来达到这一目的。食品保鲜剂大多分为杀菌剂类和抗氧化剂类。传统的抗氧化剂如:二丁基羟基甲苯(BHT),丁基羟基茴香醚,均为脂溶性抗氧化剂;而水溶性抗氧化剂常用的种类是抗坏血酸类,但抗坏血酸带酸味,其钠盐有咸味且在空气中易氧化变色,影响保鲜食品的色泽。目前,我国食品防腐剂主要采用化学防腐剂,但由于绿色食品理念的深入,人们提高了食品安全的认识,因此,天然防腐剂具有广阔的开发前景。然而某些单一的天然保鲜剂由于抑菌谱窄或在水中溶解度低,应用范围受限。研究出高效、无毒、安全的复合天然防腐保鲜剂更受到人们的关注。
发明内容
本发明的目的是提供一种生产成本低,效果理想的食品保鲜剂。
本发明的技术方案是一种高效安全食品防腐保鲜剂,所述各组分按计算重量份组成:食品级竹醋液5-40份,亚硫酸钠20-30份,乳酸链球菌素1-1.5份,氯化钙1-3份,柠檬酸钠1-10份,低聚壳聚糖0.1-0.5份,茶多酚0.1-0.5份,水余量。
本发明的优点是具有良好协同增效抑菌效果,该系列食品防腐保鲜剂具有抑菌谱广、高效的特点,使用方便,用量小,减少乳酸链球菌素、茶多酚、低聚壳聚糖的含量,从而降低成本。

实施例1,一种高效安全食品防腐保鲜剂,所述各组分按计算重量份组成:食品级竹醋液5份,亚硫酸钠20份,乳酸链球菌素1份,氯化钙1份,柠檬酸钠1份,低聚壳聚糖0.1份,茶多酚0.1份,水余量。
实施例2,一种高效安全食品防腐保鲜剂,所述各组分按计算重量份组成:食品级竹醋液22份,亚硫酸钠25份,乳酸链球菌素1.25份,氯化钙2份,柠檬酸钠5份,低聚壳聚糖0.25份,茶多酚0.25份,水余量。
实施例3,一种高效安全食品防腐保鲜剂,所述各组分按计算重量份组成:食品级竹醋液40份,亚硫酸钠30份,乳酸链球菌素1.5份,氯化钙3份,柠檬酸钠10份,低聚壳聚糖0.5份,茶多酚0.5份,水余量。
