本发明涉及一种食品防腐剂。
背景技术
为了防止各种加工食品、水果和蔬菜等腐败变质,可以根据具体情况使 用物理或化学方法来防腐。化学方法是使用化学物质来抑制微生物生长或杀 灭这些微生物,这些化学物质即为防腐剂。作为食品添加剂应用的防腐剂是 指为抑制食品中微生物繁殖、防止食品腐败变质、延长食品保存期的物质。
为了延长食品的保质期限,人们在食品加工过程中采用不同的手段,使 微生物活性丧失、延缓或阻止其生长。添加防腐剂是其中一种方便有效的食 品防腐方法并被普遍采用。早期普遍使用的是化学防腐剂,经长期研究发现 某些化学防腐剂有诱癌性、致畸性和易引起食物中毒等问题,如苯甲酸盐可 能会引起食物中毒现象,亚硝酸盐和硝酸盐可能会生成致癌的亚硝胺,对自 然界生态环境也会造成不利影响,现已严格限制其在食品中的使用量。化学 防腐剂的防腐效果还易受溶解度、食品微生物种类、pH 值等因素影响。
发明内容
本发明的目的是为了克服以上的不足而提供一种食品防腐剂。
本发明的技术方案包括:一种食品防腐剂,原料组成成分按重量份数由以下比例组成:
苦瓜精华5-10份,大蒜素5-10份,山梨酸 2-3份,食盐2-4份,双乙酸钠6-12份,朝天椒精华2-3份,乳酸钠6-10份,柠檬酸3-5份。
本发明的进一步改进在于:食盐为低钠盐。
本发明的进一步改进在于:柠檬酸由天然柠檬提取。
本发明的进一步改进在于:苦瓜精华和朝天椒精华均由苦瓜和朝天椒提炼而成。
本发明的有益效果:
本发明采用原料易得、配方合理、制备工艺简单、容易操作,大多采用天然材料,使用更放心,防腐效果好,安全无毒, 稳定性能好,具有极好的抑菌、灭菌效果。
