Abstract
MÉTODO PARA A PREPARAÇÃO DE PRODUTOS À BASE DE CARNE CONTENDO ÓLEO QUE COMPREENDEM UMA QUANTIDADE REDUZIDA DE ADITIVOS E PRODUTOS OBTENÍVEIS A PARTIR DO REFERIDO MÉTODO. A presente invenção refere-se a produtos à base de carne contendo óleo, de preferência, produtos à base de carne do tipo emulsão, produtos à base de carne moídos ou grosseiramente cominuídos, patê e salsichas frescas (cruas), que compreendem, além dos ingredientes padrão comumente previstos para os produtos à base de carne particulares, uma quantidade reduzida de aditivos selecionados a partir de agentes emulsificantes, agentes estabilizantes e/ou agentes espessantes. De preferência, os produtos à base de carne contendo óleo da presente invenção contêm um máximo de apenas um único aditivo selecionado a partir de agentes emulsificantes, agentes estabilizantes e/ou agentes espessantes. Mais preferivelmente, os produtos à base de carne da presente invenção não contêm aditivos, isto é, sem agentes emulsificantes, sem agentes estabilizantes e sem agentes espessantes. Além disso, a presente invenção pertence a um processo para o preparo dos ditos produtos à base de carne contendo óleo.
