Abstract
Inventia se refera la un procedeu pentru obtinerea unui sortiment de brînza tartinabila ambalata, constituita dintr-un singur ingredient de brînza naturala de consistenta moale pana la medie, în care se amesteca 12 parti paîna la 18 parti în greutate brînza naturala aleasa dintre brînza nuworld si cammbert, cu 0,9 pîna la 5,1 parti în greutate unut si un stabilizator constituit din guma de pastai de saclîm, guma tagacanta si gelatina în proportii în gerutate de 0,2...0,34:0,15...0,21:0,12 pana la 0,9 cu 8,5 pana la 12 parti în greutate apa si eventual sare, amestecarea mesei rezultate la temperaturi cuprinse între 125 si 130 degree C si continuarea amstecarii la aceasta temperatura înca 2...20 min, dupa care amestecatul se raceste la 75...85 degree C, se ambaleaza în containere si eventual în cazul brînzei de tipul neworld se adauga concentrat albastru de Penicillum roqueforti pentru obtinerea vinelor albastre în masa de produs, sau în cazul brînzei tipul cammbert se stropeste la suprafata brînzei o solutie de alginau de sodiu sau de caragenat de porasiu, obtinîndu-se o pelicula comestibila pe care se însamînteaza mucegaiul Penicullum cammemberti.
