Abstract

Inventia se refera la un procedeu de solubilizare a unei suspensii de cazeina aleasa dintre cazeina precipitata din lapte prin adaugarea de saruri de calciu si cazeina cheag care consta în faptul ca se suspenda cazeina sub forma pulverulenta, într-un mediu apos, de preferinta apa, suspensia de cazeina pe litru de mediu apos, de preferinta 180.....240 g cazeina pe litru de mediu apos, se lasa suspensia de cazeina la maturare timp de cel putin 10 min, de preferinta 30 min la 1 h, dupa care se adauga treptat suspensiei la o temperatura între 20 si 70 degree . agentul de solubilizare ales dintre citrat sau fosfat de metal alcalin sau un amestec de citrat fosfat de metal alcalin, pîna se obtine o solutie omogena, adaugînd citratul pîna la o valoare a pH-ului de 6,8 sau peste aceasta sau fosfat pîna la o valoare a pH-ului de 7,5 sau peste aceasta în final aceasta solutie omogena putînd fi uscata la o pulbere prin metode în sine cunoscute.
