Abstract
DONDE EL METODO COMPRENDE REDUCIR LA CANTIDAD DE HIDROXIHIDROQUINONA (HHQ) EN UN PRODUCTO ALIMENTICIO RICO EN AROMA, LLEVANDO A CABO: a) UN TRATAMIENTO TERMICO A TEMPERATURAS ENTRE 20 Y 90°C DURANTE UN PERIODO DE TIEMPO DE HASTA 2 HORAS; b) CAMBIO EN EL pH AUMENTANDOLO A UN VALOR ENTRE 7 Y 9, Y LUEGO SOMETER DICHO PRODUCTO A UN TRATAMIENTO ADICIONAL DONDE SE REDUCE EL pH A SU VALOR INICIAL; c) TRATAMIENTO DE OXIDACION MEDIANTE EXPOSICION FORZADA A OXIGENO DE DICHO PRODUCTO; Y, d) USO DE NUCLEOFILOS TRATANDO DICHO PRODUCTO CON COMPUESTOS QUE CONTIENEN AZUFRE TALES COMO SO2, SALES DE SULFITO, TIOLES O UNA SUSTANCIA QUE CONTIENE O GENERA UN SULFITO, UN TIOL, UNA AMINA O UN AMINOACIDO TAL COMO CISTEINA. EL METODO TAMBIEN CONSISTE EN REDUCIR LA CANTIDAD DE FENOLES DERIVADOS DE LA DESCOMPOSICION DE POLIFENOLES CONTENIENDOS EN ELLOS, MEDIANTE FILTRACION (MEMBRANAS, TAMICES MOLECULARES O MEMBRANAS DE DIALISIS), SEPARACION MEDIANTE RESINAS DE INTERCAMBIO IONICO, DESCOMPOSICION MEDIANTE CALOR, CAMBIO EN EL pH, OXIDACION Y TRATAMIENTO ENZIMATICO, USO DE NUCLEOFILOS (SO2, SULFITO O UNA SUSTANCIA QUE CONTIENE O GENERA UNA AMINA O UN AMINOACIDO), REDUCCION DE OXIGENO Y/O EXTRACCION SELECTIVA MEDIANTE CO2 SUPERCRITICO.
