Abstract

La presente invención proporciona un método para estabilizar el aroma de productos de alimento ricos en aroma y de sus productos, mediante la reducción de la cantidad de fenoles derivados de la descomposición de polifenoles contenidos en los mismos. La invención también describe productos de alimento con aroma estabilizado así como sus productos que tienen un aroma deseable.
