Abstract

La presente invencion se refiere a un metodo para la preparacion de particulas de almidon en un sistema de dos fases, comprendiendo dicho metodo por lo menos los siguientes pasos: a) una preparacion de una primera fase que comprende una dispersion de almidon en agua; b) preparacion de una dispersion o emulsion de la primera fase en una segunda fase liquida, con la condicion de que la segunda fase no es agua; c) reticulacion del almidon presente en la primera fase; d) separacion de las particulas de almidon formadas de este modo. De acuerdo con un primer aspecto de la presente invencion, la segunda fase consiste de un liquido hidrofobico y (paso b) consiste en la formacion de una emulsion de aceite en agua, la cual es invertida despues a una emulsion de agua en aceite. De acuerdo con un segundo aspecto de la presente invencion, la segunda fase consiste de un no solvente miscible en agua para el almidon. Se pueden producir particulas de almidon de un tamano de particula muy pequena de una manera controlada por medio de este metodo.
