Abstract

Se describe un procedimiento para clarificar un extracto de inulina crudo por ultrafiltracion y separacion de una solucion acuosa de inulina que contiene carbohidratos que tienen una escala de grados de polimerizacion en fracciones que se tienen diferentes grados de polimerizacion promedio que comprende someter una solucion acuosa de inulina a ultrafiltracion a través de una membrana que tiene un tamaño de poro predeterminado por el cual fracciones de inulina que tienen grados de pilimerizacion promedio menores de un valor predeterminado pasan a través de dicha membrana como material penetrable y las fracciones de inulina que tienen grados de polimerizacion promedio mayores de dicho valor predeterminado son recogidas como material retenido.
