1410551 Cheesemilk composition INSTITUT NATIONAL DE LA RECHERCHE AGRONOMIQUE 5 Jan 1973 [7 Jan 1972] 739/73 Addition to 1286403 Heading A2B A liquid drained cheesemilk composition for the manufacture of cheese is obtained by separating a liquid dairy product including milk as an essential ingredient or a by product from milk suitable for cheese manufacture into a first liquid filtrate and a second retained liquid component (retentate) by means of a semi-permeable membrane having an average pore diameter of at most 30 mÁ at a pressure of from 1 to 50 kg/cm<SP>2</SP>, the retentate having a higher protein concentration than the first liquid component, and continuing contacting the retentate with the said semi-permeable membrane under the said conditions until a retentate suitable for conversion into cheese is obtained, the liquid for conversion into cheese being heated to at least 110‹C before or after separation by the semi-permeable membrane.
