Abstract

1286403 Processing milk products; cheese INSTITUT NATIONAL DE LA RECHERCHE AGRONOMIQUE 9 July 1970 [18 July 1969] 33390/70 Heading A2B Dairy products comprising essentially milk or by products from milk are processed by a method comprising the steps of separating the product into first and second liquid components by placing it in contact with a semi-permeable membrane having an average pore diameter not greater than 30mu at a pressure of 1-50 kg/cm<SP>2</SP> and under turbulent or laminar flow, the first component passing through the membrane and being collected, whilst the second, having a higher protein concentration, is retained, and the second component is thereafter further separated by repeating the treatment with the semi-permeable membrane. In a particular embodiment, milk may be so treated to give a liquid "pre-cheese" having the desired composition of the final cheese, which is then treated to give a cheese product. The process may be operated on a continuous basis.
