Abstract

1445095 Milk preparations UNILEVER Ltd 30 Aug 1973 [1 Sept 1972] 40736/72 Heading A2B A milk product suitable for coagulation to form yoghurt or quark is made by increasing the protein content and reducing the calcium content of milk or an aqueous milk product, e.g. skim milk by acidifying the milk or milk product and subjecting it to membrane filtration under conditions such that the casein remains uncoagulated while mineral salts including calcium pass into the filtrate. The skim milk is acidified to pH 6.4 to 5.3 by adding lactic acid or a lactic acid producing culture, avoiding coagulation before filtration. The protein content is increased to about what is required for the final product, e.g. yoghurt or quark, and the calcium content is 0.8 to3.2% by weight of casein. After coagulation the product is mixed with sugar, fruit, fruit purÚe, fruit pieces or cream. [GB1445095A]
