Abstract
La presente invención se refiere a proporcionar una bebida de leche ácida, que no muestra precipitación o adición y separación de suero reducida, y que tiene una textura refrescante, incluso en casos donde la bebida de leche ácida tiene una concentración baja de sólidos no grasos; se proporciona una bebida de leche ácida caracterizada por contener una base de bebida de leche ácida y una pectina que tiene una viscosidad intrínseca de 5.9 a 8.5, un grado de esterificación de 74 a 80, y una reactividad al calcio de 230 o menos.
