Abstract
La presente invención se refiere a inhibición de la expansión de un producto basado en cereal, tal como un cereal listo para comer, tal como mediante un componente insoluble en particulado tal como fibra y/o calcio se evita formando pelotillas con el componente insoluble en particulado. Se usa un componente ligante, tal como almidón gelatinizado, para unir partículas de los componentes insolubles en particulado en una masa coherente que se forma en pelotillas para la fortificación del producto basado en cereal. Los productos basados en cereal, expandidos, tales como cereales listos para comer extruidos que contienen las pelotillas, presentan una textura uniforme, crujiente y una estructura celular, una duración en el bol prolongada, mejorada, una sensación en la boca no arenosa, y una apariencia de la superficie, lisa uniforme aún cuando estén fortificados con cantidades elevadas de los componentes nutricionales solubles sólidos o particulados.
