Abstract

Los productos de cereal R-T-E se fabrican a partir de una masa de cereal cocida heterogenea y secada que comprende una fase continua provista por ingredientes de cereal cocidos macerados, por ejemplo, trigo entero cortado y una fase discontinua que contiene arroz de grano medio vaporizado, intacto, hidratado e individual agregado. Los productos de cereal se elaboran mediante metodos de preparacion que incluyen formar la masa de cereal cocida heterogenea y maleable en granulos humedos que tengan piezas individuales del arroz vaporizado; secar los granulos humedos para formar granulos secos; desmenuzar los granulos secos para formar hojuelas humedas, calentar las hojuelas humedas para que se sequen e inflar las hojuelas para formar hojuelas infladas que tengan 2-5% de humedad y densidad global de 270-480g/litro.
