Abstract

La presente invención se refiere a un método para producir una bebida de cacao, caracterizado porque comprende: seleccionar una cantidad de cacao, en forma de uno o más de una escama de cacao, extracto de cacao, concentrado de cacao, polvo de cacao, o una composición de grano de cacao, para mezclarse con una cantidad deseada de agua, mezcla el agua y cacao a una temperatura por arriba de 20°C (68°F), ajustar el pH del agua o mezcla con uno o más de ácido cítrico, ácido ascórbico y sulfato ácido de sodio, separar partículas insolubles de la mezcla, y purificar o filtrar la mezcla separada, con lo cual la mezcla es capaz de ser establemente almacenada a temperatura ambiente por al menos un mes.
