Abstract
La presente invención se refiere a un proceso de fabricación de un concentrado de cerveza líquido envasado, dicho proceso comprende: proporcionar una cerveza alcohólica que comprenda de 3-12% ABV de etanol; eliminar al menos una parte del etanol de la cerveza alcohólica por medio de la destilación, produciendo así (i) una cerveza de bajo contenido en alcohol que tiene un contenido de etanol de 0-1.5% ABV de alcohol y (ii) un líquido alcohólico que contiene al menos 10% ABV de etanol; - eliminar al menos el 70 % en peso del agua presente en la cerveza de bajo contenido de alcohol mediante la separación por membrana y/o la concentración por congelación para producir un concentrado de cerveza líquido; si el líquido alcohólico contiene menos de un 20% de etanol ABV, concentrar el líquido alcohólico hasta un contenido de etanol de al menos un 30% ABV mediante destilación, ósmosis inversa u ósmosis directa; envasar por separado el concentrado de cerveza líquido y el líquido alcohólico dentro de un único recipiente o dentro de recipientes separados que juntos forman un kit de piezas. El presente proceso ofrece la ventaja de que puede utilizar unidades de desalcoholización que se emplean habitualmente en la producción de cerveza de bajo contenido en alcohol, lo que minimiza la inversión de capital. La cerveza de bajo contenido en alcohol obtenida mediante la etapa de desalcoholización puede concentrarse en una sola etapa para producir el concentrado de cerveza líquido.
