Abstract

La presente divulgación se refiere a una leche de soya baja en calorías y con un contenido reducido de azúcar, que comprende solución de extracto de soya, alulosa y aceite de soya. La leche de soya de la presente divulgación incluye alulosa y, por lo tanto, la leche de soya tiene una estabilidad superior en emulsión a pesar de la adición de una pequeña cantidad de un emulsionante, y tiene una textura en boca y un sabor excelentes teniendo al mismo tiempo menos calorías que un producto existente en el que se utiliza azúcar.
