Abstract
La presente invención proporciona un método para producir ácido láctico en un cultivo celular de levadura recombinante mediante la utilización de glucosa como fuente de carbono que comprende una primera etapa de fermentación de semillas para producir biomasa, en donde la levadura se cultiva en un medio de cultivo a un pH de 5 a 7, seguido por una segunda etapa de fermentación de producción con biomasa de la fermentación de semillas para producir ácido láctico, en donde la levadura se cultiva en un medio de cultivo a un pH bajo mediante la utilización de una cepa de levadura que es modificada para tener una actividad de lactato deshidrogenasa (LDH) y opcionalmente tiene una actividad de piruvato descarboxilado (PDC) disminuida o inhibida.
