Abstract

La presente invención se relaciona a una forma novedosa de levadura comprimida para inoculación directa en la fermentación de un substrato de fruta o vegetal, por ejemplo para la fermentación de bebidas, como vino o cerveza. Especialmente, la presente invención se relaciona a levadura comprimida con un contenido de materia seca de entre 35 % y 9% (p/p), preferentemente en una forma congelada, un método para producir una bebida fermentada por inoculación directa de un substrato de fruta o vegetal con la levadura comprimida y un contenedor que comprende la levadura comprimida.
