Claims (6)

  1. 생선알-같은 식품을 제조하는 방법에 있어서, 다음 단계
    a.점성유체, 오일물질 및 칼슘염으로 이루어지는 유제를 제조하는 단계,
    b.상기 유제를 알긴산수용액으로 적하하고 알긴산칼슘의 막으로 상기 적하된 유제를 에워싸므로써 캡슐을 형성하는 단계, 및
    c.상기 캡슐을 가열하므로써 상기 점성유체 및 상기오일 물질로 상기 캡슐내에서 상기 유제를 분리하는 단계, 와로처리하므로써 따로 따로 내포된 점성유체와 오일물질로 채워진 알긴산칼슘의 막으로 구성되는 캡슐로 이류어지는 것을 특징으로 하는 생선알-같은 식품을 제조하는 방법.
  2. 제1항에 있어서, 상기 유제 또는 상기 알긴산수용액이 형성된 상기 캡슐의 총중량의 5내지 1,000ppm의 양의, 사탕수수 설탕의 지방산 에스테르, 소르비탄의 지방산 에스테르 및 레시틴으로 이류어지는 군으로부터 선택된 적어도 하나의 계면활성제와 함께 첨가되는 것을 특징으로 하는 생선알-같은 식품을 제조하는 방법.
  3. 제1항 또는 2항에 있어서, 상기 점성유체가 크산틴검, 로우커스트콩검, 구어검, 젤라틴 및 캐러기닌으로 구성되는 군으로부터 선택된 적어도 하나의 수성졸 물질로 이루지는 것을 특징으로 하는 생선알-같은 식품을 제조하는 방법.
  4. 제3항에 있어서, 상기 점성유체가 크산틴검, 젤라틴 및 로우커스트콩검으로 이루지는 것을 특징으로 하는 생선알-같은 식품을 제조하는 방법.
  5. 제1 내지 4항중의 어느하나에 있어서, 상기 점성유체가 치자색소와 같은 수용성착색물질과 생선살 추출물 또는 게살추출물과 같은 수용성 추출물을 내포하는 것을 특징으로 하는 생선알-같은 식품.
  6. 제1 내지 5항중의 어느하나에 있어서, 상기 오일물질이 대두유, 채종유, 어유 및 라아드로 이루어지는 군으로 부터 선택되며 캐로틴과 같은 지용성 착색물질 및/또는 토코페롤과 같은 지용성보존제와 함께 첨가된 하나 또는 그 이상의 동물 및/또는 식물유로 이루어지는 것을 특징으로 하는 생선알-같은 식품.
