Claims (12)

  1. (a)물, (b)유화액의 형태로 수중에 분산된 식용 지방 및 오일, (c)유단백 및/또는 식물 단백, (d)유화제, (e) 아미노산 0.2내지 6중량%(유화액의 중량기준) 및 (f)당질 3내지 40중량%(유화액의 중량기준)로 구성된 식용 수중유형 유화액.
  2. 제1항에 있어서, 아미노산이 글리신, 알라닌, 페닐알라닌, 티로신, 세린으로부터 선택되는 식용 수중유형 유화액.
  3. 제1항 또는 2항에 있어서, 당질이 솔비톨, 만니톨, 키실리톨, 말티톨, 서당, 포도당, 과당, 맥아당으로 부터 선택되는 식용 수중유형 유화액.
  4. (a)물, (b)및유화액의 형태로 수중에 분산된 식용 지방 및 오일, (c)유단백 및/또는 식물 단백, (d)유화제, (e) 아미노산 0.2내지 6중량%(유화액의 중량기준) 및 (f) 당질 3내지 40중량%(유화액의 중량기준)로 구성된 식중 수중유형 유화액의 제조방법.
  5. 제4항에 있어서, 아미노산이 글리신, 알라닌, 페닐알라닌, 티로신, 세린으로부터 선택되는 수중유형 유화액의 제조방법.
  6. 제4항 또는 5항에 있어서, 당질이 솔비톨, 만니톨, 키실리톨, 말티톨, 서당, 포도당, 과당, 맥아당으로부터 선택되는 수중유형 유화액의 제조방법.
  7. 제3항에 있어서, 식용 식중유형 유화액이 융점 20내지 40℃이고 SFI값이 10℃에서는 10내지 70이고, 15℃에서는 50내지 60이고, 20℃에서는 0내지 50인 식용 지방 및 오일을 함유하는 식중 수중유형 유화액.
  8. 제3항에 있어서, 유화액이 유화액의 중량에 기준하여 10내지 50중량%의 양으로 식용 지방 및 오일을 함유하는 식용 수중유형 유화액.
  9. 제3항에 있어서, 휘핑크림용 유화액이 유화액의 중량에 기준하여 20내지 50중량%의 양으로 식용지방 및 오일을 함유하는 식용 수중유형 유화액.
  10. 제3항에 있어서, 커피 화이트너용 유화액이 유화액의 중량에 기준하여 10내지 35중량%의 양으로 식용 지방 및 오일을 함유하는 식용수중유형 유화액.
  11. 제3항에 있어서, 쿠킹 크림용 유화액이 유화액의 중량에 기준하여 10내지 50중량%의 양으로 식용 지방 및 오일을 함유하는 식용 수중유형 유화액.
  12. 제3항에 있어서, 인산염을 부가적으로 함유하는 식용 수중유형 유화액.
