Abstract
PURPOSE: To remove butter-like flavor, and to improve the meltability in the mouth, of ices such as icecream, by adding cyclodextrin to butter or butter oil used as a raw material of cream.
CONSTITUTION: Butter and/or butter oil are added with 0.5W10wt%, pref. about 5wt% of cyclodextrin, and emulsified with water. The amount of the water is 0.5W 10 times that of cyclodextrin. The emulsion is used as a raw material of cream, from which ices are prepared by conventional method.
