Claims (4)
- 수분 약 1.8-10% 우유지방분 3%이상을 함유하는 생크림함유 초코렛에 있어서, 우유지방30% 이상의 생크림과 친유성 유화제로 구성된 W/O형 에멀죤이 초콜렛생지에 반죽하여 혼합시킴을 특징으로 하는 상기 생크림함유초콜렛.
- 제1항에 있어서, 상기 W/O형 에멀죤에는 말토스, 글루코스, 텍스트로스, 프툭토스, 소르비톨, 말티톨, 삭카로스 등과 같은 당류, 소르비톨과 말티톨의 당알코올유로 구성되는 구룹에서 선택된 첨가물을 포함함을 특징으로 하는 상기 생크림함유초콜렛.
- 제1항 또는 제2항에 있어서, 상기 친유성유화제가 글리세린 지방산에스테르, 글리세린아세트산 지방산 에스테르, HLB6이하의 폴리글리세린지방산 에스테르, 폴리글리세린 축합리시놀산 에스테르, HLB6이하의 수크로스 지방산 에스테르, HLB6이하의 소르비탄지방산 에스테르로 구성된 그룹에서 선택함을 특징으로 하는 상기 생크림함유초콜렛.
- 제1항 또는 제2항에 의한 생크림 함유초콜렛을 제조하는 방법에 있어서, W/O형 에멀죤은 온도 45℃이하에서 템퍼링타입의 초콜렛생지 또는 비템퍼링타입의 초콜렛생지에 반죽하여 혼합시킴을 특징으로 하는 상기 생크림함 유초콜렛의 제조방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
