Claims (12)
- 과일을 50℃이하의 온도에서 공기건조시킴으로써 처음 중량의 20~60%까지 물을 제거시킨 다음 이 공기건조된 과일재료를 1종이상의 당을 함유하는 수성 매체속에 침지시키는 것을 특징으로 하는 과일재료처리법.
- 제1항에 있어서 온도는 40℃이하인 것을 특징으로 하는 과일재료처리법.
- 제1항에 있어서 수성매체는 총용해 고체물질을 40-60중량%(용질) 함유하는 것을 특징으로 하는 과일재료처리법.
- 제1항에 있어서 초기 공기건조단계에서 제품중량이 초기중량의 20~45%까지 감소된 다음 수성용질에의 노출단계에서 총 60%까지 감소되는 것을 특징으로 하는 과일재료처리법.
- 제1항에 있어서 수성용질은 자당, 과당, 포도당, 옥수수 시럽 또는 이들의 배합물을 포함하는 것을 특징으로 하는 과일재료처리법.
- 제1항에 있어서 수성용질은 단당류를 포함하는 것을 특징으로 하는 과일재료처리법.
- 제1항에 있어서 과일재료는 최종적으로 내동되는 것을 특징으로 하는 과일재료처리법.
- 제1항-제7항중 어느 한 항의 과일재료처리법에 의해 얻어지는 과일재료.
- 신선한 상태의 중량의 40~80%중량을 가지며 약간의 당이 첨가된 냉동과일재료.
- 제9항에 있어서 글리세롤, 솔비톨, 크실리톨 또는 이들의 배합물이 첨가되는 것을 특징으로 하는 냉동 과일재료.
