Abstract

PURPOSE: To improve the expanding property of a grain and obtain a uniform porous expanded grain having improved reconstituting property, particularly as an instant rice, by gelatinizing a grain, adding one or more types of sugars or sugaralcohols to the gelatinized grain, and expanding the grain.
CONSTITUTION: A grain is gelatinized by the conventional methods, e.g. boiling, steaming (under ordinary to reduced pressure), etc., and the moisture is adjusted to give the moisture content of 10W20%. One or more types of sugars or sugaralcohols are then added to expand the gelatinized grain. Sucrose, glucose, fructose, maltose or thick malt syrup may be citied as the sugars. Sorbitol, maltitol, or xylitol may be cited as the sugaralcohols. The amount of the sugars and sugaralcohols is preferably 0.1W3.0wt%. The grain wherein the sugars or sugaralcohols are added is expanded by heating with hot air or the radiofrequency dielectric heating method.
