Abstract
PURPOSE: To obtain a natural sweetener having high quality sweet taste comparable to that of natural sucrose, by adding saccharified reduced starch to stevioside, thereby eliminating the bitter taste, disagreeable taste, and undesirable aftertaste of stevia extract.
CONSTITUTION: A composition composed of 1 part of stevia extract and 10W300 parts of saccharified reduced starch. The composition is optionally adjusted to pH 6.8W7.3 with potassium phosphate, and if necessary, added with 0.1W2.0%, based on the stevia extract, of glucone delta lactone.
