Claims (18)
- 텍스트로스가 D.E.가 25까지를 갖는 가수분해된 전분과 최소한 약 40%의 용해성고형물과 약 0%의 비용해성 고형물의 과일즙 또는 과일농축시럽의 흔합물을 포함하여 약 40%내지 65%의 복합탄수화물, 상기 과일즙 또는 과일농축시럽으로부터 약35%내지 55%의 단당류 그리고 과일즙 또는 과일 농축시럽에서 천연적으로 일어나는 약 0%내지 5%의 건조중량 조성물을 갖는 액체를 형성하는 것을 특징으로 하는 과일농축 감미료 조성물.
- 제1항에 있어서, 가수분해된 전분이 약 5내지 25의 D.E.를 갖고, 과일즙 또는 과일농축시럽이 최소한 60%의 용해성 고형물을 갖는 것을 특징으로 하는 과일농축 감미료조성물.
- 제2항에 있어서, 가수분해된 전분이 최소한 65%내지 72%의 용해성 고형물을 포함하는 과일즙 또는 과일농축 시럽으로 혼합되기 전에 약 30%내지 40%의 용해성 고형물을 포함하는 멜토-덱스트린인 것을 특징으로하는 과일농축 감미료조성물.
- 제1항에 있어서, 농축물이 부분적으로 또는 완전허 감미료조성뭍을 탈향시키기 위하여 선택적 활성탄으로 주기적인 시간동안 접촉되는 것을 특징으로 하는 과일농축 감미료 조성물.
- 제1항에 있어서, 농축물이 옥수수시럽등으로 대체되기에 적당한 감미료조성물을 형성하기 위하여 약 78% 내지 80%의 용해성 고형물로 건조되는 것을 특징으로 하는 과일 농축 감미료 조성물.
- 제1항에 있어서, 농축물이 분말 또는 과일 수크로스등과 같은 감미료를 대체하기에 적당한 감미료조성물을 형성하기 위하여 약 96%내지 99%의 용해성 고형물로 건조되는 것을 특징으로 하는 과일농축 감미료조성물.
- 제6항에 있어서, 농축물이 대체되는 감미료의 부피밀도와 본질적으로 동일한 부피밀도를 갖도록 농축된 것을 특징으로 하는 과일농숙 감미료조성물.
- 제1항에 있어서, 농축물이 분사식건조에 적당한 액체를 형성하기 위하여 약 35%내지 45%의 용해성 고형물까지 물과 희석되고, 희석된 액체가 약 96%내지 99%의 용해성 고형물을 갖는 제품을 형성하기 위하여 분사식 건조되는 것을 특징으로 하는 과일농축 감미료조성물.
- 제1항에 있어서, 순수과일농축즙 또는 과일농축시럽에 포도, 배, 파인애프, 사과 그리고 그들의 혼합물로 구성된 군으로부터 선택되는 것을 특징으로 하는 과일농축 감미료조성물.
- 제1항에 있어서, 단당류가 과일농축즙으로부터 추출되어 글루코스, 수크로스 그리고 과당을 포함하는 것을 특징으로 하는 과일농축 감미료조성물.
- 제1항에 있어서, 당류식품 또는 당류음료를 형성하기 위하여 다른 선택된 성분과 결합되는 것을 톡징으로 하는 과일농축 감미료조성물.
- 40%내지 65%의 복합탄수화물, 과일즙 또는 과일농축물의 약 35%내지 55%의 단당류, 약 0%의 불용성고형물, 약 0%내지 5%의 영양분 그리고 약 0%내지 3%의 감미보지제의 중량비조성물로 구성되어, 물로서 균형을 맞춘 것을 특징으로 하는 과일농축 감미료조성물.
- 제12항에 있어서, 부분적으로 또는 완전히 감미료 조성물을 탈향시키기 위하여 선택된 활성탈과 주기적인 시간에 접촉되는 것을 특징으로 하는 과일농축 감미료조성물.
- 25이하의 D.E.와 약 30%내지 40%의 용해성 고형물 가수분해된 전분을 최소한 약 40%의 용해성 고형물을 갖는 과일즙 또는 과일농축시럽으로 혼합하는 단계와, 그렇게하여 약 40%내지 65%의 복합탄수화물, 과일즙, 또는 과일농축시럽으로 부터 약 65%의 복합탄수화물, 과일즙 또는 과일농축시럽으로 부터 약 35%내지 555의 단당류 그.리고 약 0% 내지 5%의 영양분의 건조중량비조성물을 갖는 액체를 형성하는 단계틀 포함하는 것을 특징으로 하는 과일즙감미료의 제조방법.
- 제14항에 있어서. 시럽타입의 감미료를 형성하기 위하여 약 78%내지 80%의 용해성고형물까지 상기 액체를 건조시키는 단계를 더 포함하는 것을 특징으로 하는 과일즙 감미료의 제조방법.
- 제14항에 있어서, 건조감미료를 형성하기 위하여 약 96%내지 99%의 용해성고형물가지 상기 액체를 건조시키는 단계를 더 포함하는 것을 특징으로 하는 과일즙 감미료의 제조방법.
- 제16항에 있어서, 액체가 약 35% 내지 45%의 용해성고형물까지 회석되어 분사식건조되는 것을 특징으로하는 과일즙 감미료의 제조방법.
