Abstract

Περιγράφονται μια γλυκαντική σύνθεση από συμπύκνωμα φρούτων και μια μέθοδος στην οποία το γλυκαντικό παρασκευάζεται από ένα υδρολυμένο άμυλο με ισοδύναμο δεξτρόζης (D.E.) περίπου 5 ώς 25 και ένα διαυγές συμπύκνωμα φρούτων με τουλάχιστον 40% διαλυτά στερεά και περίπου 0% αδιάλυτα στερεά ώστε να σχηματιστεί ένα σιρόπι με σύνθεση, ως προς το ξηρό βάρος, περίπου 40 ως 65% σύνθετους υδατάνθρακες, περίπου 35 ώς 55% απλά σάκχαρα προερχόμενα από τα φρούτα και περίπου 0 ως 5% θρεπτικά συστατικά. Η γλυκαντική σύνθεση μπορεί να απογευστικοποιηθεί μερικώς ή γενικώς και μπορεί να ξηρανθεί μέχρι 96 ώς 99% διαλυτά στερεά.
