Claims (20)
- 식물 분말을 함유하는 화이트초코렛이 다공질 식품에 함침된 화이트초코렛 함침 식품으로서, 식물 분말의 메디안 직경이 10 내지 18㎛이고,
상기 다공질 식품의 표면의 기포 크기가 100㎛ 내지 1000㎛이며,
상기 다공질 식품의 두께가 3mm 내지 25mm인 화이트초코렛 함침 식품. - 제1항에 있어서, 상기 화이트초코렛 중 무지유고형분의 함유 비율이 15중량% 미만인 화이트초코렛 함침 식품.
- 제1항 또는 제2항에 있어서, 상기 식물 분말이 습식 분쇄 장치로 분쇄된 식물 분말인 화이트초코렛 함침 식품.
- 제3항에 있어서, 상기 습식 분쇄 장치가 리파이너 및 볼밀로부터 선택되는 화이트초코렛 함침 식품.
- 제1항 또는 제2항에 있어서, 상기 식물 분말의 원료인 식물이 과실, 야채, 차류, 견과류 또는 허브류인 화이트초코렛 함침 식품.
- 제5항에 있어서, 상기 식물이 딸기, 토마토 또는 말차인 화이트초코렛 함침 식품.
- 제1항 또는 제2항에 있어서, 상기 식물 분말을 함유하는 화이트초코렛이 유화제를 더 함유하고, 상기 유화제의 함유 비율이 상기 식물 분말을 함유하는 화이트초코렛을 기준으로 하여 0.7 내지 1.2중량%인 화이트초코렛 함침 식품.
- 제1항 또는 제2항에 있어서, 상기 식물 분말을 함유하는 화이트초코렛이 산미료를 더 함유하는 화이트초코렛 함침 식품.
- 제8항에 있어서, 상기 산미료의 함유 비율이 상기 식물 분말을 함유하는 화이트초코렛을 기준으로 하여 0중량% 초과 내지 0.3중량%인 화이트초코렛 함침 식품.
- 이하의 (a) 내지 (c)의 공정을 포함하는 화이트초코렛 함침 식품의 제조 방법:
(a) 식물 분말과 식용 유지를 혼합한 후에 상기 식물 분말을 분쇄함으로써, 상기 식물 분말의 메디안 직경이 10 내지 18㎛인 식물 분말 페이스트를 얻는 공정,
(b) 상기 식물 분말 페이스트와, 무지유고형분의 함유 비율이 15중량% 미만인 화이트초코렛을 혼합하여 식물 분말 함유 화이트초코렛을 얻는 공정, 이어서
(c) 다공질 식품에 상기 식물 분말 함유 화이트초코렛을 함침하는 공정으로서, 상기 다공질 식품의 표면의 기포 크기가 100㎛ 내지 1000㎛이며, 상기 다공질 식품의 두께가 3mm 내지 25mm인 공정. - 제10항에 있어서, 상기 (a) 공정에서 습식 분쇄 장치를 이용하여 상기 식물 분말을 분쇄하는 제조 방법.
- 제11항에 있어서, 상기 습식 분쇄 장치가 리파이너 및 볼밀로부터 선택되는 제조 방법.
- 제10항 내지 제12항 중 어느 한 항에 있어서, 상기 (c) 공정이
(c1) 밀폐 용기 내에서 다공질 식품을 감압 조건하에 두고, 감압 상태를 유지하면서 식물 분말 함유 화이트초코렛에 접촉 또는 침지시킨 후, 대기압으로 복귀시키는 공정
을 포함하는 제조 방법. - 제10항 내지 제12항 중 어느 한 항에 있어서, 상기 (c) 공정이
(c2) 밀폐 용기 내에서 다공질 식품을 식물 분말 함유 화이트초코렛에 접촉 또는 침지시킨 후, 감압 조건하에 두고, 이어서 대기압으로 복귀시키는 공정
을 포함하는 제조 방법. - 제13항에 있어서, 상기 (c) 공정이 상기 (c1) 공정에 계속해서,
(c3) 밀폐 용기 내에서 다공질 식품을 식물 분말 함유 화이트초코렛에 접촉 또는 침지한 상태를 유지하면서, 감압 조건하 또는 가압 조건하에 둔 후, 대기압으로 복귀시키는 공정
을 포함하는 제조 방법. - 제14항에 있어서, 상기 (c) 공정이 상기 (c2) 공정에 계속해서,
(c3) 밀폐 용기 내에서 다공질 식품을 식물 분말 함유 화이트초코렛에 접촉 또는 침지한 상태를 유지하면서, 감압 조건하 또는 가압 조건하에 둔 후, 대기압으로 복귀시키는 공정
을 포함하는 제조 방법. - 제13항에 기재된 제조 방법에 의해서 얻어지는 화이트초코렛 함침 식품.
- 제14항에 기재된 제조 방법에 의해서 얻어지는 화이트초코렛 함침 식품.
- 제15항에 기재된 제조 방법에 의해서 얻어지는 화이트초코렛 함침 식품.
- 제16항에 기재된 제조 방법에 의해서 얻어지는 화이트초코렛 함침 식품.
