Abstract
본 발명에 따른 효소 약초 장아찌는 제조과정에서 약초로부터 수득한 약초 효소액, 약초 효소 간장 등을 이용하기 때문에 종래의 일반 장아찌에 비해 짠맛이 강하지 않아 관능적 특성이 우수하고 장아찌 주재료인 식물의 엽록소 성분이 거의 그대로 유지되어 영양적 특성과 시각적 특성이 뛰어난 장점을 가진다. 특히, 본 발명에 따른 효소 약초 장아찌는 저염 섭취가 필요한 당뇨병 환자, 고혈압 환자 등의 환자식에 밑반찬으로 이용될 수 있다.

도 2는 본 발명의 실시예 1에서 제조한 효소 뽕 잎 간장 장아찌(왼쪽)와 비교예 1에서 제조한 일반 뽕 잎 간장 장아찌(오른쪽)의 이미지를 나타낸 사진이고, 도 3은 본 발명의 실시예 2에서 제조한 효소 곤달비 간장 장아찌(왼쪽)와 비교예 2에서 제조한 일반 곤달비 간장 장아찌(오른쪽)의 이미지를 나타낸 사진이고, 도 4는 본 발명의 실시예 3에서 제조한 효소 콩 잎 간장 장아찌(왼쪽)와 비교예 3에서 제조한 일반 콩 잎 간장 장아찌(오른쪽)의 이미지를 나타낸 사진이고, 도 5는 본 발명의 실시예 4에서 제조한 효소 민들레 간장 장아찌(왼쪽)와 비교예 4에서 제조한 일반 민들레 간장 장아찌(오른쪽)의 이미지를 나타낸 사진이다.

Claims (6)
- (a) 약초를 선택하는 단계;
(b) 상기 (a) 단계에서 선택한 약초 100g 당 매실 5~60g, 차조기 잎 5~60g 및 설탕 80~180g을 혼합하여 약초 효소액용 혼합물을 형성하고, 상기 약초 효소액용 혼합물을 옹기에 넣고 밀봉 후 발효시켜 약초 효소액용 발효물을 형성하고, 상기 약초 효소액용 발효물을 여과하여 얻은 여과액을 옹기에 넣고 밀봉 후 숙성시켜 약초 효소액을 수득하는 단계;
(c) 상기 (b) 단계에서 수득한 약초 효소액 100㎖ 당 물 500~1000㎖, 염분 농도가 10~20 중량%인 간장 300~600㎖, 및 설탕 50~120g을 혼합하여 약초 효소 간장용 혼합물을 형성하고, 상기 약초 효소 간장용 혼합물을 용기에 넣고 끓여 부피가 1/2~5/6로 줄어든 약초 효소 간장용 농축액을 형성하고, 상기 약초 효소 간장용 농축액을 옹기에 넣고 밀봉 후 숙성시켜 약초 효소 간장을 수득하는 단계;
(d) 간장과 된장을 혼합하여 형성한 혼합장에 상기 (a) 단계에서 선택한 약초를 넣고 염장한 후 건져내고, 상기 염장 후 건져낸 약초 및 상기 (c) 단계에서 수득한 약초 효소 간장을 옹기에 넣고 밀봉 후 1차 숙성시키고, 다시 옹기에 상기 (b) 단계에서 수득한 약초 효소액을 넣고 밀봉 후 재숙성시켜 약초 간장 장아찌를 수득하는 단계;를 포함하고,
상기 (d) 단계에서 약초 100g을 기준으로 염분 농도가 10~20 중량%인 간장 100~400㎖ 및 된장 20~100g으로 이루어진 혼합장을 사용하고,
상기 (d) 단계의 1차 숙성 과정에서 약초 100g을 기준으로 약초 효소 간장 100~500㎖를 사용하고,
상기 (d) 단계의 재숙성 과정에서 약초 100g을 기준으로 약초 효소액 20~100㎖를 사용하는 것을 특징으로 하는 효소 약초 장아찌의 제조방법.
- 제 1항에 있어서, 상기 (a) 단계는 뽕 잎, 곤달비, 명이, 산초 잎, 민들레, 함초, 톳, 차조기 잎, 콩 잎, 매실, 질경이, 마늘종, 양파, 더덕 잎, 참가죽 잎, 참취, 및 곤드레로 이루어진 군으로부터 하나의 약초를 선택하는 단계인 것을 특징으로 하는 효소 약초 장아찌의 제조방법.
- 제 1항에 있어서, 상기 (b) 단계의 발효 과정은 15~35℃에서 60~150일간 수행되고, 숙성 과정은 15~35℃에서 120~240일간 수행되는 것을 특징으로 하는 효소 약초 장아찌의 제조방법.
- 제 1항에 있어서, 상기 (c) 단계의 숙성 과정은 상기 약초 효소 간장용 농축액을 옹기에 넣고 밀봉 후 1차 숙성시켜 약초 효소 간장용 1차 숙성액을 형성하고, 상기 약초 효소 간장용 1차 숙성액을 끓인 후 다시 옹기에 넣고 밀봉 후 2차 숙성시키는 것으로 구성되고,
상기 (c) 단계의 1차 숙성 과정은 5~20℃에서 30~90일간 수행되고, 2차 숙성 과정은 0~15℃에서 60~120일간 수행되는 것을 특징으로 하는 효소 약초 장아찌의 제조방법.
- 제 1항 내지 제 4항 중 어느 한 항에 있어서, 상기 (d) 단계의 1차 숙성 과정은 0~15℃에서 30~90일간 수행되고, 재숙성 과정은 0~15℃에서 240~600일간 수행되는 것을 특징으로 하는 효소 약초 장아찌의 제조방법.
- 제 5항에 있어서, 상기 (d) 단계의 재숙성 과정은 옹기에 상기 (b) 단계에서 수득한 약초 효소액을 넣고 밀봉 후 0~15℃에서 90~150일간 2차 숙성시키고, 다시 옹기에 상기 (b) 단계에서 수득한 약초 효소액을 넣고 밀봉 후 0~15℃에서 150~450일간 3차 숙성시키는 것으로 구성되고,
상기 (d) 단계의 2차 숙성 과정 및 3차 숙성 과정에서 약초 100g을 기준으로 약초 효소액 10~50㎖를 각각 사용하는 것을 특징으로 하는 효소 약초 장아찌의 제조방법.
