Claims (2)
- 백설탕 50중량부, 포도당 40중량부, 포도당시럽 8중량부, 구연산 1중량부, 식용색소 청색1호와 식용색소 황색4호 및 식용색소 적색40호로 구성된 색소 0.27중량부, 콜라향을 내는 향료 0.59중량부, 식염 0.04중량부, 진주분 95중량%와 엽산 5중량%로 구성된 진주가루 0.01중량부를 포함하는 조성으로 이루어진 것을 특징으로 하는 진주캔디.
- 백설탕 50중량부와 포도당 40중량부, 포도당시럽 8중량부를 조성한 후, 끓는 용기에 넣고 혼합하는 제1단계와;상기 제1단계의 혼합물에 구연산 1중량부, 식용색소 청색1호와 식용색소 황색4호 및 식용색소 적색40호로 구성된 색소 0.27중량부, 콜라향을 내는 향료 0.59중량부, 식염 0.04중량부를 조성하여 첨가하는 제2단계와;상기 제2단계를 거친 혼합물을 냉각시키는 제3단계와;상기 제3단계를 거친 혼합물을 회전되는 성형단지에 투입하고 원심력을 이용하여 둥글게 캔디모양으로 형상화시키는 제4단계와;상기 제4단계를 거친 캔디를 30~40℃의 온도조건을 형성하고 회전되는 도포단지에 넣고 진주분 95중량%와 엽산 5중량%로 구성된 진주가루 0.01중량부를 투입하여 회전되는 캔디의 외면에 진주가루를 입히는 제5단계와;상기 제5단계를 거친 진주가루가 입혀진 캔디를 건조 처리하는 제6단계를 포함하여 이루어지는 것을 특징으로 하는 진주캔디의 제조방법.
