Claims (3)
- 찰쌀보리쌀 분말의 2 내지 25 중량%;밀가루의 15 내지 45 중량%;메밀 가루의 5 내지 15 중량%;고구마, 감자 또는 옥수수에서 추출한 전분의 25 내지 35 중량%;글루텐 5 내지 15 중량%;소다의 1 내지 3 중량%; 및소금(식염)의 1 내지 3 중량%를 포함하는 냉면 조성물.

- 찰쌀보리쌀 분말의 2 내지 25 중량%, 밀가루의 15 내지 45 중량%, 메밀 가루의 5 내지 15 중량%, 고구마, 감자 또는 옥수수에서 추출한 전분의 25 내지 35 중량%, 글루텐 5 내지 15 중량% 및 소다의 1 내지 3 중량%를 가하여 이들을 서로 혼합하는 단계;상기 혼합물에 소금(식염)의 1 내지 3 중량%와 물을 넣어 혼합하고 반죽하는 단계;상기 반죽된 결과물에 대해 2 차례의 압착 공정을 진행하고 소정 크기의 구멍을 통해 뽑아내어 냉면 면발을 제조하는 단계를 포함하는 냉면의 제조 방법.
