Claims (1)
- 【特許請求の範囲】 1.酵素の固定方法であって、以下の工程、 a.固定する両親媒性酵素を選択し、 b.連続する疎水相及び分散する水相を含むエマルジョンを製造し、ここにお いて、水相は酵素及び次の工程で実施される場合、酵素の担体として作用するの に適する物質を溶解しており、 c.分散する相が、固体の酵素を被覆した粒子へ変化するまで水を除去するこ とを特徴とする、方法。 2.酵素が、リパーゼ及びホスホリパーゼからなる群から選択されることを特徴 とする、請求項1の方法。 3.リパーゼが、リゾムコールミエヘイ(Rhizomucor miehei)、フミコララヌ ギノサ(Humicola lanuginosa)又はリゾプスニブェウス(Rhizopus niveus)か ら得られることを特徴とする、請求項2の方法。 4.水相が、発酵液体を含むことを特徴とする、請求項1乃至3のいずれか1請 求項の方法。 5.疎水相が食用トリグリセリド油であることを特徴とする、請求項1乃至4の いずれか1請求項の方法。 6.担体物質が、砂糖、澱粉、デキストラン、水溶性セルロース誘導体及び発酵 残渣からなる群から選択されることを特徴とする、請求項1乃至5のいずれか1 請求項の方法。 7.疎水相が、加工される物質を含み、その物質が、トリグリセリド、ジグリセ リド、モノグリセリド、グリセロール、リン脂質及び脂肪酸を含む群から選択さ れることを特徴とする、請求項1乃至6のいずれか1請求項の方法。 8.水相に溶解される酵素と担体物質が、請求項1乃至7のいずれか1請求項の 方法で調整された固定された酵素の粒子に由来し、反応バッチから分離されるこ とを特徴とする、請求項1乃至7のいずれか1請求項の方法。 9.粒子状の担体に接着された、固定された両親媒性酵素であって、担体物質が 、水相に溶解することを特徴とする、固定された両親媒性酵素。 10.酵素が請求項9の固定された酵素であるか、又は、請求項1乃至8のいずれ か1請求項の方法で得られた酵素であることを特徴とする、両親媒性酵素によっ て触媒される方法。 11.リパーゼの触媒作用の下、グリセロール骨格上の脂肪酸基が交換される、モ ノ−、ジ−、又はトリグリセリドのエステル交換の方法であって、リパーゼが、 請求項9の固定された酵素であるか、又は請求項1乃至8のいずれか1請求項の 方法で得られることを特徴とする、方法。 12.リパーゼの触媒作用の下、脂肪酸がモノ−又はジグリセリドでエステル交換 される、トリグリセリド油の酵素的脱酸の方法であって、リパーゼが、請求項9 の固定された酵素であるか、又は請求項1乃至8のいずれか1請求項の方法で得 られることを特徴とする、方法。 13.ホスホリパーゼが、請求項9の固定された酵素であるか、又は請求項1乃至 8のいずれか1請求項の方法で得られることを特徴とする、ホスホリパーゼによ り触媒される方法。 14.リン脂質をトリグリセリド油から除去する方法であって、以下の工程、 a.リン脂質を含むトリグリセリド油を、リパーゼを含む調製物と混合し、 b.リン脂質をリゾリン脂質へ加水分解し、 c.加水分解されたリン脂質を油から分離する 工程を含み、ホスホリパーゼが、請求項9の固定された酵素であるか、又は請 求項1乃至8のいずれか1請求項の方法で得られることを特徴とする、方法。
